In fact she had to literally run away from home to become one. The ceremony took place with in the chapel of the monastic community. Obviously the parish church is open to everyone, but not the chapel of a cloistered monastic community.
I think they would still cut it a little only as a symbolic act. Anyways it was highly unlikely for a woman to have that short hair that can't be cut at those times. Women were expected to have long hair. Of course some desease or anything like malnutrition could get a woman to have short or little hair but I suppose there is always something to cut!
