Based on Jamie's reaction, Kush and Ebbers should do an entire video exposing him to common food lies - like "Crispy Seaweed", or what "Beef Trimmings" actually means on processed foods, or how what you get in your local Fish & Chips shop isn't actually Vinegar, but a "‘non-brewed condiment’ made out of water, ethanoic acid, flavorings and food colorings, designed to be cheaper and less time-consuming to brew."

4:15 most often iceberg lettuce unless you go to a really cheap Chinese place.
Cabbage has an unpleasant aftertaste which doesn't go away and really amplifies when fried, quite acrid.
Thus iceberg lettuce is preferred for being essentially flavourless and taking on solely the flavour of the oil it was fried in and the 5 spice powder, pork or fish floss and touch of sesame oil and demerara that it might be finished with.
Although my local is very cheap and just uses veg oil to cook nothing but cabbage with CASTER sugar 😂

The reason that the rich were so rich, Vimes reasoned, was because they managed to spend less money. Take boots, for example. ... A really good pair of leather boots cost fifty dollars. But an affordable pair of boots, which were sort of OK for a season or two and then leaked like hell when the cardboard gave out, cost about ten dollars. ... But the thing was that good boots lasted for years and years. A man who could afford fifty dollars had a pair of boots that'd still be keeping his feet dry in ten years' time, while a poor man who could only afford cheap boots would have spent a hundred dollars on boots in the same time and would still have wet feet.

Don't forget the part where the rich aren't really troubled much by having a private consultant for their investments that actually works for them and not just for their bank. And let's not skip the part where rich people don't go broke and run out of treatment options if they get hit by a spot of illness. How about the part where rich people have better access to information and thus better access to the knowledge required to know what actually is or isn't a good investment? Or rich people having plenty of money to put into good investments when they find them?

  • @hilotakenaka

Just a very small correction with the coffee segment; washed-processed coffee didn’t become popular solely because they wanted to standardise the flavour, but it was due to how coffee beans are fairly prone to decaying. As washed-process coffee beans could be roasted darker without their flavour diminishing as opposed to natural or honey-processed (where overripe beans were picked and fermented with the aril left on) coffee, it could be transported long distances without going off.
Also I hope Ben enjoyed his trip to Tassie! We’re about to have one of our big food festivals. Hope you guys get to visit it in the future!

As a self-proclaimed coffee lover, what I would say is that natural coffee processing isn't necessarily a trend in the world of specialty coffee. Alongside with washed and honey processing , natural processing has been one of the most common and popular coffee processing method in the last decade or even more. However, more experimental processing techniques are indeed becoming trends in recent years with the likes of aerobic and anaerobic fermentation, carbonic maceration and lactic fermentation. I would love to see you guys make a video introducing specialty coffees to both chefs and normals, maybe with the help of experts (James Hoffmann would be a fascinating example).

First of all, I've never ever seen 'seaweed' in Chinese food sold here. It's only used in condiments as far as Chinese stuff goes. Secondly, I'm quite sure that it would not be allowed in Europe or at least the EU. If something says it contains seaweed, then there has to be seaweed in there. This goes for all ingredients, not just seaweed. Even if it may not be harmful, it has to contain what it says on the lid.

Carbon negative is a bit more exciting to me than naturally processed coffee; although I appreciate you guys talking about the positives for the environment that comes from this processing method! Despite the branding, natural processed coffee isn't actually that unheard of; I work for Starbucks, and we have reserve and occasionally seasonal featured coffees that are naturally processed, so that gives you an idea of the scale that this is being done at already.
There's also a lot of really great work being done finding ways to close the gap when it comes to the waste water created by wet processing. After steeping in the fermenting coffee, that water is as good as toxic waste; if you were to just dispose of it in the ground or worse a river, it would kill animals and flora it comes into contact with. In Costa Rica, there's some really exciting work happening around keeping that water recycling through the system as many times and humanly possible. The farm I visited was testing a machine which would reduce their water consumption by 80%!

Regarding the banana flour and the idea of reducing food waist: Living in a place where a lot of apples are grown I know that they divide the harvested apples into different categories. They get more money for the nicest ones that can be sold at the supermarket while lower qualities go to factories. The lowest quality are turned to juice.
They could probably do this with many fruits that don't get sold in time at a supermarket to reduce food waist. Once the fruit gets peeled, chopped into pieces, pureed, dried etc. the visual imperfections that are often the reason for throwing them away are gone.
I feel the problem isn't so much that there aren't already ways to use these things, it's that there's no system to collect them and make it a better alternative for supermarkets to just throwing it into the garbage. Possibly there also laws in some countries that current make something like this difficult.
Also agricultural subsidies can lower prices so much that it's cheaper for the industry to just grow more then collecting what's already there. Same thing happened with biofuel and bioplastic. They're growing certain crops like corn specifically for that instead of using food waist.

Down here in Costa Rica, coffee is getting way more accessible in these varieties. Not only have more people realized that these methods are more sustainable, but also that well done, they blow most commercial coffees out of the water. More and more small batch producers are showing up and are actively seeking export partners as the supply is surpassing demand locally. There's also a whole thing with one of the largest coffee companies doing ethically questionable practices to small farmers and still being commercially exported, to which producers are trying to escape and find better treatment.

it´s not the right video to post it under, but a format suggestion would be a chef unleashed versus.
Make Kush and Ebber have a cook off, but not a 20/30 minute one but maybe even across 2 or 3 courses where they have time to plan and go all out with no restrictions. That would be a really cool video. You might even stretch that across multiple videos like you did with the groceries batlle video where barry, Jamie and mike had one video each

Just started watching. I've been pickling dried kelp, the thicker type of seaweed, and it works nicely on a sandwich or in salads. The funny thing is I I live in the Midwest of the USA. I'm sure it's been done somewhere in the Orient for decades, if not centuries, but I did it on a whim when I ran out of garden cucumbers. Just an FYI.
