I understand completely. We homeschool our children and they were also inquisitive about coconuts. Now they think they're so cool because of the different stages and how every part of the coconut can be used. From eating, to cleaning, to arts and crafts.
As I live in south Florida where coconuts are everywhere I've decided to try and take advantage of their availability. So I've been watching UA-cam for a few hours on the subject but did see much that enticed me to subscribe to their channels Except yours! AWESOME STUFF Here!!!!

the ones with the thick husk are definitely the hardest to open. Any suggestions to opening them without having to buy additional knives? maybe recommendation on a meat using a meat cleaver or something else that maybe laying around to cut into and pry that husk off

At what stage do the coconuts usually fall off the tree by themselves? In the movie Castaways, it showed them fallen off while still green (young).... was that just for movie purposes?

If they are down already, then just harvest the water. They have to turn brown on the tree to get the thick coconut meat to make milk.

Yes that was just for movie purposes. They're usually fully brown and hard before they fall
