    Hi Sweet Friends, You may notice that I have a special little friend on my kitchen island with me as I make this lemon cake made with whole wheat flour! It's Benjamin Bunny!! Many thanks to my sweet friend Brooke! For the cake, "Benjamin" and I used white whole wheat flour instead of the usual red whole wheat and I was impressed with how light the cake came! This is a great way to introduce whole grains to your friends and family if they have not liked them before because of the heaviness of red whole wheat! Love, Mary

      I have given you a thumbs up before watching whole video because I knew that cake will come out very nice so after watching I confirmed that I was right :) Yummiest cake, will try it someday. Bunnies hmmmmmm I love them too, innocent creatures of God.

    What a coincidence! I am having a lemon cake in the oven right now...
    This is also perfect for canning - I just fill half of a Weck jar and bake it at 160 Celsius degrees (I don’t know what this is in Fahrenheit) for 55 minutes, put the lid on while still hot and keep the canned cake for these emergencies where one desperately needs a slice of cake and fast 😉. It is good for a year, probably longer, but a year was the longest I had one for.
    I love the whole grain flour and will definitely give it a try next time I bake.
    This will make it a bit healthier...

    I was gonna ask, wouldn't milk sour or go bad mixed with lemon juice, lol but you already answered it, Its supposed to curdle.

    Love this recipe! I cannot wait to try it, Mary! Quick question: when doing your sugar ferments, have you ever used Sucanat instead of regular (organic) white sugar? I just tried it today with my homemade apple cider vinegar, so I will let you know in 30 days or so how it turns out! Also, where did you get that fabulous ladle??? I love the size! Also, you could use milk kefir instead of milk mixed with the lemon, right?

    I made this yesterday. It was heavy and dense. I did something wrong. Was it because I used all purpose organic wheat flour and added all that baking powder? Thanks

      Hi Rebecca, So sorry to hear this! Chances are the culprit was over mixing. Quick breads and muffins for that matter, only like the batter to be mixed enough so that the dry ingredients are just moistened. Try again and let me know if it comes out better. Love, Mary

    Hi Mary! I think I have to divide this cake by 6 and make only ONE portion, as I can't zest 6, only 1 lemon is enuf 4me! tired hands! the common white wheat flour is usually bleached, bran removed etc. Never realised there were 2 types wheat here! but I've only noticed us getting one type in UK! apart from that, this cake looks luvly n easy! ARE U TALKING TO YOUR KIDS OUT THERE... U sound like a children's teacher! v nice, tk u!

    Hello there from California! We used to live in Tx for 10 years. My children were born there too. Special place in my header.
    Question - can I use ordinary all purpose white flour for this recipe? With the “ shelter in place” situation right now I can’t go out and get this wheat flour for now.

    Thank you for the lovely recipe! I wanted to make a smaller version,
    so below is what I think the approx measures might be for the rest who would like to make a smaller version of this.
    Approx about 1/3 of the measures to make a smaller version:
    little over 3/4 cup flour
    1 tsp baking powder
    less that 1/4 tsp baking soda (a pinch or 1/8 maybe)
    less than 1/4 tsp salt (a pinch)
    1/2 an egg (or stick to 1 egg, will add richness)
    1/3 cup cane sugar (white cane jaggery/ aka other names, lol)
    zest of 2 lemons
    2 1/2 to 3 table spoons melted butter
    juice of 2 lemons mixed with about 1/4 cup milk (I guess, or maybe a little more)
    (Hope this helps for those of us low on ingredients or budget during quarantine)
