Thank you for the Roman memories. I remember so well the six months I lived in Rome in 1979 - ages ago. One of my favorite memories was the Festa de’Noantri and the porchetta booths! While the porchetta was worthy of the gluttony involved, there was that special sauce that would run down one’s arm in places you could never lick. That sauce was super delicious - you could never get too much! All that oil. lemon, origano, maybe garlic and other things was that sort of thing that is perfect for scarpetta! Would love to see a video that luxuriates and wallows in the specialness of the Festa de’Noantri!
