HOW MUCH WATER!!! Add water little by little & check the batter, adjust the consistency by adding starch water, if the sauce is too thick , add more water to make it thinner, seems pretty self-explanatory to me. If you like a thick sauce add less water, if you like a thin sauce add more water, so to answer the question, How water do you need?, you need as much as you need.

1-2 minutes it depends on the oil temperature.
