As per the dahi bara,aloodum, its a mixture of salty and spicy.salty dahibara,spicy aloodum. This kind of combination is found in Odisha with some unique ones where sweet with savory, sweet with spicy etc. Cuttack the city of 1000 years old(established in 900 AD) has been a city of many things including famous street food like dahi bara aloodum,one can find many countless shops,small stalls selling in every nook and corner through out the city from morning 7 to night 9. Also famous for silver filigree art,city of harmony and both cultural heritage and also including british building,kings kothis etc. Once a strategic stronghold with a fort named barabati(bati is a measure of land in old system like acre in now a days or square foot. bati in that term means huge piece of land, so 12 pieces of huge land was the area of the fort with gadakhai(moat) filled with crocodies, with river water coming from the river both sides of cuttack).That fort was destoryed by British with king's other forts which included his new capital at Khordha because there the kings soldiers were from, that area).So, cuttack fort and khurda fort checked muslim invasions from south like Bijapur,golconda and from north from West bengal. Also the modern capital Bhubaneswar had many forts around it as second layer of defence.

Thanks for reacting to this video after my suggestion. It took more than 1 year to make this happen. Any way,hope you react to more of the suggestions I had sent you. I will try to clear some of the doubts. First piaji- Piaji is called so because it is made from pyaz which in Odia is called as piaja. In english it is known as onion fritters. Now the difference between pakoda and piaji is in pakoda,quanity of piaj is less and more besan,piaj small pieces chopped while in piaji, larger pieces of piaj,more piaj,less besan. Pakoda batter liquid,paiji batter thick. Now think if someone wants to eat piaji but without piaj like my late mother who did not eat onions and garlic,pure vegetarian. So, for her I used to take pattagobi(bandha kobi in our language)chop it to fine pieces,add besan,green chili,ginger and make batter and fry. We used to call it bandhaji because made from bandha kobi or patta gobi.Yes to make piaji or bandhaji more crunchier, one must add powdered rice but coarsely grinded(it means safed chawal ka chura banana hai lekin powder nahin).If you add that,you can feel the crunchiness of the rice along with every bite. Also it is made from channa dal. Channa dal soaked for sometime, grind it with less water to make a paste but not too fine,little coarse, add ginger,onions,green chili,same coarse rice powder(this is available in the market or one can make at home by using grinder) to it and fry it. Here one can use or skip onions. we normally call it buta dali bara(chana dal vada). When they fry, they make round shape and fry otherwise first half fry a batch take it out, put another batch and while that is being fried,they use a small bowl to press the half fried, make them flat and fry again after taking the second batch half fried.

That was actually not pyazi but dal bada(but in cuttack they call it pyaji), pyazi is actually made from pyaaz( onion). And chena poda is not same to the cake which moazzam was saying, it is totally different. And bamboo is also cooked in western Odisha and parts of North East India.

In hindi belt states like - UP , MP ,Bihar , Haryana Gulgula is made on our every birthday . On every birthday of a boy till his marriage a mother or elder female of family make drink boy a steel cup of milk and do tilak and boy take her ashirwad. Then gulgulas are given to every women of family and neighborhood who attended the function (5-10 mins function ) . Its called rochna karke doodh pilana meaning traditional celebration of birthday..gulgulas are of sooji and sugar and are fried in oil and served dry.. Gravy concept is no where with any.its just a sweet dish

I am from Cuttack. the area that I live in is Dahi Bhara Chakka In the native language Odia, Chakka is called Square
As per the chenapoda,that is the authentic unique dish of Odisha. it was discovered accidentally by a person in 1960 time. At that time most cooking was done by wood fire especially in homes,hotels and other shops using chulah or by coal using bhatti. Refrigrator was not available in cities even no electricity in villages. So sweet makers used to preserve curd,milk in clay pots(metal pots,bowls will have chemical reaction) for cheese they used brass plates which is very common in Odisha. Brass plates for eating,glass for drinking water,brass lota,balti. I saw those for many years in my village and my mother's village used to some extent till now. So the sweet maker used to put a banana leaf on a brass plate,put cheese on it,cover it with another banana leaf and cover it with another brass plate. That way cat could not eat it as brass plates are heavy and cheese would not touch the brass, so no chemical reaction and cheese does not go bad. After cooking in the coal bhatti, the sweet maker sprinkled water on the coal to put out the fire. But he accidentally put that cheese plate on that coal which was smoldering. He went home and came next day. When he removed the plate, he saw the banana leaf has turned brown and so was cheese. He now thought since the cheese is of no use, throw it. Before throwing, he taste a little and it had a unique taste. He got an idea, that night he added some sugar and cardamom to it and put it the same way. The next day the result was same but the taste was outstanding and unique. Even if the cheese is brunt from bottom and sides,the brunt taste was not there. The sugar due to heat was caramelized and coated well with the cheese everywhere. Thus he started selling this as chenna poda(chenna means cheese and poda means brunt). Now they still make it using the traditional way and also using modern oven. Both burnt and steamed version. Once in a lifetime experience for sweet lovers. One and only of its kind. The person who passed away some years back was named-Sudarsan sahu of Nayagarh,Odisha Now this sweet is found in every sweet shop of Odisha whether small or big,city or village. You can google his name or just google inventor of chenna poda.
