You could nail a 2x2 on each side of the smoke house walls and put a wood frame on the wire racks and so you could slide the racks out to turn meat and you wouldnt have to breath all that smoke. My smoke house is 4x4x7 feet and i can put a whole elk in it except the back straps and tender loins. I smoke meat for a few people as they say mines so good.

I discovered back eddys when I was working in the bush in the far north of Ontario, the northern store carried it. You reminded me of it a few years back, I ordered it a few times from a bbq place in Alberta.
Hi Andrew. Great video! The fellow who owns the camp we go to on the Churchill River uses a very similar brine when he smokes walleye for us. It is fantastic!
For smoke generation in my smokehouse I use 2 metal pails 🪣 (2 1/2 gallons) fill 1/3 with hot coals and then sawdust or wood chips on top. Once it starts smoking I place them in the smokehouse and close the door. Periodically I add chips/sawdust to keep the smoke 💨 going, hot coals will last 24 hours or more. Just an idea on an alternative method. Keep up the good work on the videos!

There must be a problem at his local water treatment plant. Municipal water is extremely closely monitored and more regulated than the bottle water industry. Id be more worried about smoking meat on galvanized wire racks.

Smoked Lake trout is my fav. I beer batter and deep fry Walleye but that Buffalo meat made my mouth water before you opened the package. Smoke shack is working good!
great video.the reason for flavored smoke chips is they are hard wood which are desirable for smoking.however,there are no hardwood in the NWT.I never tried diamond willows.Also Back Eddie spices contains MSG.

Putting a slice of bread in with your sugar will keep it soft. Same thing with a container of homemade cookies.

Dried meat is awesome. Tried dried squid even once, surprisingly good, wasn't sure what to expect!! lol
