    You could nail a 2x2 on each side of the smoke house walls and put a wood frame on the wire racks and so you could slide the racks out to turn meat and you wouldnt have to breath all that smoke. My smoke house is 4x4x7 feet and i can put a whole elk in it except the back straps and tender loins. I smoke meat for a few people as they say mines so good.

    a slice a bread in a plastic container will absorbe the humidity from the brown sugar wil last a long time before it gets hard just check one and a while

    My old smoke shack I had a truck rim in the bottom for the fire, never had an issue with burning the shack.

    Warm spring air, father for a visit..back eddys and smoking in the old outhouse, sounds like heaven...lol. I discovered back eddys when I was working in the bush in the far north of Ontario, the northern store carried it. You reminded me of it a few years back, I ordered it a few times from a bbq place in Alberta.

    Hi Andrew. Great video! The fellow who owns the camp we go to on the Churchill River uses a very similar brine when he smokes walleye for us. It is fantastic!

    For smoke generation in my smokehouse I use 2 metal pails 🪣 (2 1/2 gallons) fill 1/3 with hot coals and then sawdust or wood chips on top. Once it starts smoking I place them in the smokehouse and close the door. Periodically I add chips/sawdust to keep the smoke 💨 going, hot coals will last 24 hours or more. Just an idea on an alternative method. Keep up the good work on the videos!

    Putting a slice of bread in with your sugar will keep it soft. Same thing with a container of homemade cookies.

    Always love to hear about tribes sharing the bounty of a hunt or slaughter. Members and elders keep the tribe alive. nice vid. Ur mom and dad were always a little camera shy. Now we may never see dad on camera again, lol.

    There must be a problem at his local water treatment plant. Municipal water is extremely closely monitored and more regulated than the bottle water industry. Id be more worried about smoking meat on galvanized wire racks.

    You always have something interesting for us to learn. We smoke catfish regularly, going to get adventureous and try some carp this year. Regular table in other countries, ought to find a use for then here.

    Too bad the only people that can keep a fish out of a lake in Alberta are natives. Two fish a year with your tags if you get drawn while natives have no bag limit. seems fair eh?

    Yes cooking oil can go rancid. Found out the hard way Nutella does too after a big bite of it on toast. Still can't touch the stuff lol

    at least 75 fillets, and 20 lbs. of moose meat will do. By the time you keep picking at it during the smoking and friends coming over, and people wanting a some to go leaves you with a little bags worth

    Smoked Lake trout is my fav. I beer batter and deep fry Walleye but that Buffalo meat made my mouth water before you opened the package. Smoke shack is working good!

    great video.the reason for flavored smoke chips is they are hard wood which are desirable for smoking.however,there are no hardwood in the NWT.I never tried diamond willows.Also Back Eddie spices contains MSG.

    I brine my steelhead the same way, except I smoke it with cherry and alder, not having diamond willow available here in Pennsylvania.

Freaking buffalo meat is some awesome eating, never tried dried but plenty of steaks and roasts👍🏼 hope You can get Rudy to know his limits on what is cool and what gets a swift kick,,pups Man just like kids, beatem when their young, hope for the best, expect the worse.
