How do you know which angle to use for your edges?

Take note how he only does the side edge and not the base edge. This is fine, as you need more expert tools to do the base edge.
Some other videos show people using the same tool he did, to do the base edge. Obviously there is no control over the degree when you do so and you'll get an inconsistent result.
Groundhog574 had a good series of videos on this topic as well.
How do you tune all season long using your fingernail to check your edges? I used to wear through just tuning my own skis. Moved to using the skin of my finger gently to check for smooth which is sharp. Burrs will remove fingernail too. ;) Nice basic video. Flat first then side edge to sharpen.

From my experience with snowboarding, the tip of the edge is the area with the least amount of contact with the snow. If you try out a brand new snowboard or you sharpen the full length of the edge, you can feel that tip grabbing onto the snow when you carve. Some people prefer to keep it sharp. This guy doesn't completely know what he's talking about.
You probably ride a rocker board. For sure detune when riding camber, you can get by not doing it with rocker. He should have talked about the distinction between rocker and camber but keep in mind that when he published the video the majority of boards were still camber shaped and rocker was kinda still the new kid on the block.

Coming from knife sharpening standpoint, if “professionals” use these tools they are missing out on so much. You can sharpen anything to near perfection only with hands. No tools can help you do that.
I sharpen all my knifes till they shave with is just the beginning of sharp. Comparing that to skis is plain foolish. You can tell the difference of a .5 base angle vs a .75 base angle freehand? Pure rubbish
Point made. It's all about keeping that base angle between edges, not necessarily the sharpness
where i live, for 10 freaking dollars you can get ur board BELT waxed and they barely even scrape it.

Several things wrong with these techniques. Look elsewhere and compare techniques before you ruin your edges.
