there are a few different ways to achieve that. The fastest and easiest way off the top of my head would be to create a colored matte and then alpha matte the letters to it. Otherwise, you'd need a separate layer for each letter and that wouldn't make sense because it would be overly cumbersome. but if you create a multi-colored layer that aligns with each letter, then alpha matte to that layer, that could work. Let me know if this makes sense.
