Ingredients: 300g/10.5oz/1.3 cups Rhubarb (blueberries or Raspberries good alternative) - cut the rhubarb in half length ways (if large) and cut again into small pieces 150g/5.3oz/3/4 cups Caster sugar 110g/ 4oz/1 stick Butter (I used margarine) 2 large eggs 1 tsp/6g Vanilla extract 100g/3.5oz/0.7cup Natural yoghurt 250g/8.8oz/1 cup Self raising flour 1 tsp baking powder 40g/6 tbsp ready made custard put the melted butter/marg (cooled), vanilla extract, yoghurt, eggs and sugar into a jug and mix thoroughly. In a large bowl, pop the s.r. sifted flour and baking powder and add the mixed wet ingredients and mix until well combined (do not overmix it will make the muffins tough) add the cut up rhubarb to the mix and gently fold over until well combined. In muffin cases, add mixture to about half way in case, add a tablespoon of custard and add a large spoonful of mixture on top. Pop into preheated AF on BAKE setting 160c/320f for 15 to 20 mins Ninja AF took 15mins Cosori oven took 20mins muffins are cooked when internal temp reaches minimum 98c
Another fantastic recipe. I love rhubarb and would never have thought of trying this but I'll definitely give these muffins a go now. Kerry, your channel is the only place I've been able to find straightforward basic recipes and demonstrations of how to use air fryers, adjust timings, temperatures and so on. All the (expensive) books I've looked at have very fancy air fryer recipes but don't guide you through the basics. Why don't you collect everything together and produce a good basic cook book? I'd definitely buy it and I'm sure thousands of other people would as well. Keep up the amazing work you do - I don't know where you get the energy to do it all!

Just found this episode and it was nicely timed as my dear friend has just given me a huge bunch of her rhubarb So I will deifinitely be trying these, thankyou. I love your site so much and watch it lots. Am writing down your recipes in their own book!
Have you thought of making rhubarb and strawberry jam? I use a 50:50 mix of fruit and equal weight of sugar with added pectin, so that the low pectin fruit will set without boiling the mix for ages and spoiling the flavour. Also rhubarb chutney is delicious - feels odd thinking about chutney making in spring but can be made any time you have fresh rhubarb. Thank you for your air fryer recipes.

Awww thank you it means a lot as bereavement is very much an up hill struggle. I am Ray and I thank Jackie and family for doing this. The technology is moving forwards and if we can help push that it will mean a lot to do many. My partner managed the disease for 23 years with ever changing medication, so please don’t despair. Will have go at making them , but will need to use or half quantity of sweetener in , as diabetic. Did you use paper case Kerry or silicone. Hope the lady who’s hubby has prostate cancer makes a full recovery, my hubby and our best friend have also had it, with treatment both staying stable at the moment. So fingers x for them all. And many many others.
They were lovely those earrings Karen😍 fun too. I loved the doughnuts lol. Powdered sweetener would work as a sugar substitute I think. I used silicone, paper ones don't do well under the fan, tend to blow about😀👍💕

I haven't had any for years but rhubarb and custard is so good,we used to have a few crowns growing in the back garden when I was young so a lot of our puddings included it,crumble etc,I like a blueberry muffin with my Costa coffee now and again but I haven't baked any myself so I will need to have a go,another enjoyable video Kerry Xx

kerry, i would love a rhubarb plant its one of favorites, apple and rhubarb what combination i go over to the farm shop by me it aint cheap. it freezes well, but to be honest i eat it all before gets there, which infuriates my wife! muffins i give it a go.

That silicon muffin tray started off as a 6 hole one, but I cut off 2 to make it fit the ninja, bought it from a shop in town called flying tiger Copenhagen, they're very like IKEA. You may have one near you, not sure if their products can be bought online. Quite price friendly, I vaguely remember it being around the £2 mark (I could be wrong!) 👋😀💕
