    For anyone doing this. Make sure to let the drill bit melt through the plastic rsther than pushing it through as that stuff cracks super easy

    Made mine with a similar plastic box, dowels and flyscreen. Pimped it up a bit by using a computer fan with LEDs powered with an old 230v ac to 12v dc LED driver. No lamp in mine as I'm in Perth, Australia and it's warm enough most of the year. Just did a batch a fortnight ago and it took four days.

    Thank you, this is very helpful and I like your design. I made mine circa 1995 and it still goes well. For easier cleaning, I placed my dowels in the lid. However, I immediately saw my mistake when the biltong was lifted out of the box every time I opened it and taking some out became a two-person operation. Also, hanging the biltong in the lid becomes cumbersome since you have to place the lid on something where you can access the dowels from the bottom. Like the backs of two chairs. You live you learn :)

    Small holes and R clips in the dowels for easier removal for the cleaning process sounds like a good idea.

    Great box, i made one similar to this out of a half sized galvanized bin, one thing extra i added to stop drips on the light because of limited much needed space, i took a coke can drilled a hole in the bottom for cable to fit through cut the can on drilled side to make a cowl over light which is easily cut with a nt style cutter then laid light fitting centrally inside can to mark drill holes for locking in place. Worked a dream and extra space achieved, you know when the biltongs ready the whole family wants a piece.😁😁

    Good video! I've seen others that put holes in the lid while also utilizing a fan. Seems like the extra lid holes are unnecessary. It would be interesting if someone would do a comparison with and without top holes. Thanks for the video.

    Great video! I’m curious is the flavour different if you didn’t have a fan, worse? And how much longer would it take without a fan.
    I’m curious how important air flow is. I make salami and it can hang for a few weeks and fresh air is very important as it will go bad. But seems biltong is a quicker process and May not need as much fresh air. Im not sure. I’m curious

    Hi Mr Ex man and Co....I am from SA now in Canada...I love all your videoes...Your food makeing is so good....I am a butcher man for 34 years and here we just cant get nice biltong spice...We have to buy diffarent spices mix it all together then spice the biltong meat...I realy wish I could get Deli Spice Crown National bitlong Spices....Keep up the good wrk and videoes...Keep Safe....Danny Parker

    Excellent instructions, got the box together quickly and am already making my 3rd batch (using your perfect biltong recipe). My only regret is not making a big enough box, I can't keep up with the demand.

    i woulnd say that fan is optional, proper airflow is the most important thing during drying any meat. The bulb on the other hand is kinda optional, because the heat coming from it is there mainly to lover humidity, it helps with drying process too to some degree, but you can dry biltong in a room temperrature...even 25°C will do, optimal is around 35°C and 40°C and more is too much, from my experience.

      Could you dry it at around 15-20°C , maybe taking longer?
      Hard to maintain a higher temperature where I am.

    Hi Xman, thanks for this video. I hope to make one of these soon. Just a question if you wouldn’t mind, what hole saw bit did you use to ensure you don’t crack or break the container when drilling. Thanks, keep up the good videos.

      Hi Werner. I will have to check. No special hole saw. The trick is to let the hole saw do the work. So whichever one you use just take it gently and slowly. Let the saw do the work and you will be fine. Soon as you put to much pressure and force the saw it will crack.👌🔥

      If you can get a piece of scrap board behind the point it helps prevent cracking and splitting, or if you cant, don't put a lot of pressure on it, and let the bit go with very little pressure to prevent cracking or splitting.

      Hi to be honest I would not do that. You would need to then make sure the input and output is the same etc. I would just go with the extraction fan. Hope this helps.🔥🔥👍

    Just made my first biltong courtesy of this video and the recipe video - thanks dude! I'm currently at day 5 - so time to give it a try! Have you heard of or tried Henderson's Relish? I might give it a go next time - and for you, it's gotta be easier to pronounce than Worcestershire Sauce. ;-)

    Amazing tutorial, thanks Xman & Co. I really want to try this. But before I begin. 1/ Where do you put your box (inside or outside? 2/ Is it preferable in a dark place/room? 3/ If your room has no air flow, is the fan enough?

      Hi there. Both will work inside or outside. Preferebly a room with some airflow but the fan is also assisting so not the end of the world if this is not possible. Not in direct sunlight but also normal light would be perfect. Hope this helps. 🔥🔥👍

    Having the fan blow into the box instead of sucking air out would be prefered, will protect it from moisture etc from the meat.

      That would be the difference between a hydrator and a dryer. The light would also assist with the moisture etc.

      Hi there first prize would be at the bottom as hot air rises and this will help. But if that is not possible the lid should do the job. Hope this helps and stay safe... 🔥🔥👍

      Hi @@XmanCo​- thanks for the video. Would it not be better to have the lamp near the bottom on one end of the box with the extractor fan on the other side? It seems to me that you'll lose a lot of heat going straight up from the light bulb to the fan if it is directly above.

    Does the lamp need to be in the middle or the top? Cant it be in a corner so the blood dont fell on it? Also the fan is better be in the middle of the basket?

    I have an almost identical box, using it in France. However, it's just about impossible to get incandescent bulbs nowadays and led or other bulbs don't get warm. Any ideas on what alternatives one can use?

      Hi Cobus, have you tried looking at an oven or fridge bulb? They may be incandescent. Another possible option are bulbs for a garage opener. I can't have LED bulbs near our garage opener because they cause interference with the remote opener signal. Ours remain incandescent because of that. I hope that helps!

    Great video, question : Can I buy ready made sausage from my butcher, and then just hang them in my Biltong box ? Which has a globe and fan in ? Or does it need the whole salt and vinegar soaking thing firs t? Thnx

      Hi Alexi, no unfortunately this will not work. It will go off (rotten) as the preservative namely vinegar is missing and you most probably have pork in your sausage which will go rancid and not good for your health if treated in this manner.     I built one without a fan but condensation built up in the box. I reside in Ireland. Is there any way to prevent this water buildup?

      Hi there, a few factors could be adding to this problem. The biggest one is airflow. You need a strong airflow over the meat. Then temperature also plays a role. If the difference between the outside of the box and inside is huge this could also happen. Biltong needs a dry warm environment with good airflow. Maybe see if you could add a fan? Hope this helps.       I’d definitely recommend a fan for our climate. I just have a little pc fan powered by a usb cable. South Africa is a lot drier.

      You could try do dried fruit etc. Normally you need a hydrator which basically blows the air over the ingredients rather than sucking the air. This should still work thougg. 🔥🔥👍

      Hi Riana, you can search for a 220 computer fan. I bought mine at A1 radio which is like a electrical component shop. Incredible connection do have them too. These are options in South Africa. I hope this helps. 🔥👍

    Thanks for the video. Wees net f****n versigtig! I drilled my plastic with a 10mm drill bit and it cracked. Maybe pre drill slowly with 6mm and then drill with the next one up as it may crack your plastic. And yes be prepared to be messed around as Murphy will have it most stores won't have what you are looking for and if your are in Cape Town the butcheries are shit and unhelpful.

      Hi there, the light is basically to help dry the air. If you dont have that humid conditions then the light is not an issue. Hope this helps. 🔥🔥👍

      You could use a pc fan yes. I have gotten this fan at my local electrical shop. Nothing wrong with a pc fan though. It will work prefectly. 🔥🔥👍

    how do you control humidity?

      I actually do not try too although we have a high humidity percentage. I believe the fan and the bulb work together in achieving this goal. Never had an issue. Hope this helps

      Howzit man, im not sure if you are in SA? There are a few place. One is crown national. I bought a grinder at Makro and was inexpensive. Hope this helos. Crown National also sell casings and or your local butcher should be able to do that for you too. 🔥🔥👍

    Hi. Quick question. I made a biltong box like this, but my fan points inward (blows inward) and not out (not extraction). Is that OK? It's my 1st time making biltong.

      Hi Johan, if the air is blown downwards over the meat and not extracting then its basically a dehydrator which is also an option to make Biltong. There is a slight difference but not huge. Hope this helps man. Stay safe 🔥🔥👍

      Hi David you dont need the light bulb. Its optional, however it helps in areas where its humid to dry the air as humidity will destroy your meat and in all events the light bulb helps speeds up the process too. Other than that its optional and not needed. Hope this helps. 🔥🔥👍

      Normally you don't but we live in humid environment and therefore its definitely a good idea. So it will depend where you live and this will speed up the process as hot air moves up and will help with your airflow especially if you dont have a draft etc in the room. Hope this helps. 🔥🔥👍

    Where I live the temperature never drops below 20°C and is usually 28-33°C
    Assuming a light fir heating is not required then!
    Although humidity is high here.
