950g pork hind leg
580g pork muscle meat (Use this cut if you prefer less fat in your meat)
Enough water to cover the pork
30g galangal (lightly smashed)
6 coriander roots (lightly smashed)
1 cinnamon bark
2 star anise
1 bulb garlic
80g palm sugar
4 tbsps oyster sauce
50ml light soy sauce
4 tbsps premium dark soy sauce
1 tbsp white peppercorns
8 tsps salt
6 hard-boiled eggs
Chilli sauce

8 red chillies (deseeded)
4 cloves garlic
4 bird's eye chillies (deseeded)
Juice from 4 calamansi
100ml white vinegar
0.5 tsp salt
Pickled mustard

3 cloves garlic (chopped)
170g pickled mustard (cut into smaller pieces)

This is an amazing recipe. I made it for the second time tonight. After making it I strained the broth the pork cooked in put in the left over pork bones and added 3 lites of water and simmered it for a few hours.
Made a great noodle soup base for the next two lunches for my family of four.

Should boiled the pork trotter in water with ginger, wine and scallion first. I've tried this recipe and the pork so smelly, too bad the sauce taste good esp the chilli sauce.
