- Soupe au pistou is a pesto style bean, pasta and potato soup. Very simple to make and the outcome of flavours is incredible. I grew up with this soup in the South of France, enjoyed it even on hot summer days. It's a very hearty soup guaranteed to satisfy as a complete meal. It has similarities to a minestrone but simpler to make. Great for vegetarians or vegans just leave out the cheese. If you have a cold, make a big batch, that will cure you! Enjoy Soupe au pistou in winter or in summer.

I will definitely give this a try, especially with the cold weather around the corner here in Quebec, Canada. Our winters can get extremely cold with -40C with wind chills sometimes reaching -50C. Thanks for your amazing yummy recipes!!

You forgot the meat. I bet Mama always put light smoked and salty ham in it. I hated soup in those days. Too bad when I think back. Mother also made homemade pizzas in the early part of the 1970'ties. She had been inspired from a vacation in Italy. Mama made Bolonaise pizza.

C’est une soupe de PÂTES D’abord on met les haricots frais rouges et blancs a cuire dans l’eau froide et l’on incorpore au l’un après l’autre les légumes coupés en petits dés a mis cuisson on sale car le sel bloque la cuisson des haricots frais quinze minutes avant la fin de cuisson on. ajoute cinquante grammes de pâtes et on laisse finir de cuire
Lorsque c’est cuit on arrête la cuisson on remue pour refroidir un peu et on incorpore le pistou
Il ne faut plus faire bouillir car le basilic perd son goût

Ouch! Firstly pistou is different to pesto. Any chef or epicurean could tell you that. Or someone who does a bit of research. Pistou is a cold sauce, without cheese. It's actually closer to a persillade.
Secondly, you may like to have a word with the sound designer/editor. My basil never sounded like that. Lol Otherwise photography is ok.
Yes pistou is a cold sauce as shown in recipe and I'll tell my basil to change its voice. Glad photography was ok.

I was born in Marseille, my father was a Chef and that's the soup I had growing up. It's it's made up rubbish, as you so kindly put it, at least have the decency of explaining why Neil Francis. That's how we learn on this channel.
