Just to help out, I scaled down the recipe to the one used in the video.
    1 egg
    2/3 cup milk
    4 tsp sugar
    1 cup all purpose flour
2/3 tsp baking powder (slightly over 1/2 tsp)
1/6 tsp salt (slightly less than 1/4 tsp)
    These were so good.

The recipe turned out great, i didn't have any funnels tho. So I used a gallon ziplock bag, which worked just fine (Be sure not to cut the hole too big/small).

Quick warning if you're going to empty the oil out of the skillet WAIT UNTIL THE OIL COOLS! Getting burnt by hot oil can cause second to third degree burns in which both can cause a scar to form after healing the burns. It is not pleasant and will heighten the risk of skin cancer just like sunburns. Hot oil is very dangerous and if a child is around it make sure to keep an eye on them or take them away from danger as soon as possible.

+Fisher.by.choice I'm sorry to hear that. Recently I burnt my index and middle fingers while getting my dads dinner out of the oven. People actually try to move hot oil? I've always known to just let the oil cool on the stove off the hot burner since I was a kid. If people don't know those basics they might want to learn about putting out oil fires. Invest in a fire extinguisher or baking soda.

First off... this is the first Recipe that actually worked. THUMBS UP! 2nd off Thanks MONICA you saved me a bunch of time. (Now I just go straight to your scaled down version)
Seeing that it's almost 1am I decided I would play with the recipe a little to avoid eating a lot of
grease. So I mixed about 5 tablespoons of butter flavored shortening with the Canola oil. Plus I mixed in some LIMONCELLO and homemade vanilla extract with plenty of Vodka. PLEASE USE the FUNNEL... hence the name ... I made the first one with the Ketchup bottle technique, it was super thin and hard... the 3rd try was the best, I Used the FUNNEL with no fear and it was light and perfect... I gave that one to my sleeping wife... she was very happy.
UPDATE: If you put it in the funnel and it looks running.... STOP just put it back in the bowl and add more flour... It's better to have the first one too thick and have to add more Vanilla or milk... than pour half of your loose mix and have to waste time cleaning all the little bits out of the oil and having a LITERALLY HOT MESS on your hands.
Ok, It's around a week later... I found a can of APPLE FILLING...It tastes like a PANCAKE/WAFFLE that would have your kids dancing to school with Joy. If I could get up and have this for breakfast 3 x a week I think I would be a happier person.
Don't go crazy with the powdered sugar. It should look like a light coating of snow. The apple filling will be plenty sweet. Don't bother putting more sugar on top... it will just melt into the filling sauce.
P.S According to Nigella Lawson you can keep Waffle or pancake "batter for up to 2 days after making it and it should be kept refrigerated at all times. The batter should be transferred to an airtight container or left in a tightly covered jug. You may find the batter separates a little as it stands but it can be whisked gently to bring it back together."
I think I'm on my way to a fatter / happier me. ENJOY

You CAN do it in a regular pan but you really need to watch the temp of the oil. It's a lot more difficult trying to get an even heat in a regular pan which is why I prefer the cast iron. Cast iron works as a regulator to keep it from getting too hot or too cold to quick. A regular pan can go from not hot enough to too hot in a matter of seconds. Add to that that you won't be using the thermometer when you're actually making the cakes so any number of things can go awry if you're new to frying.

You forgot the butter, once the batter is made, you mix the dry ingredients with the dry and wet with wet separately. Then you take some melted butter and fold in gently into the batter, it makes it puff up and spread very easily. I use to work a funnel cake booth and made 1,000's of them. Just letting you know. Just divide the full recipe by 3 to get the measurements I used in the video. Be forewarned that it results in 1/6 tsp and 2/3 tsp measurements which are not standard units of measure in the kitchen (which is why I don't recommend you use the scaled down recipe unless you are an experienced cook and have experience scaling down recipes and using non-standard units of measure).

Cordaro Young not a bad price but still a good profit for the food truck. Each funnel cake probably costs $1 at most in ingredients. Baking has a high profit to cost ratio but you have to push large quantities to see good results.

Save the pancake mix for pancakes. Some will say that you can use it but when you compare it with one made with a funnel cake specific recipe, there is no comparison. They are two completely different things. One is light, fluffy and melts in your mouth and the other is heavy, dense and greasy.

Yes however add more water than the recipe requires and stir thoroughly until all lumps in the batter are gone. If the batter is lumpy it doesn't come out in a continuous pour like it should.

    Crouton,
I love your sewing videos and have made a couple of your crafts thru the last few years dating back to 2016. I have been dying for a funnel cake but when I have gone to the fair always with my mom since the 1980s the lines have always been too long. My mom passed away 4 weeks tomorrow July 26, 2021. The fair is in town this weekend. My boyfriend encouraged me to go as my mom knew I loved the arts and craft section and such good food being made in all the tents. My BF said he woukd go with me even though he was dead tired after work. The funnel cake line was so looooooooooong but, he said we have to get one.
Thinking about making them has always been intimating but i figure if i can make sticky buns and Hungarian polachintas for my mom from scratch, I can make this. My mom has a white funnel someplace I believe is the size you recommend. I make my Hungarian polachintas from scratch same ingredients you use.
When I googled a UA-cam video to make these your's was in the pick and of course your's is the only one I will watch. I only use canola oil so I think they will be great. Thank you for taking the intimidation out of my mind to make them. I want to make them this week. I will ho shopping for fresh food after work tomorrow.
This video is from awhile ago I hope you will still get alerts to my reply. Sincerely, Rebekah in Arlington, VA

Just tried to do it and it was a massive fail we'll sort of. I heat the oil and all all went well made the mix it looked good then boom that's when I mess up. Didn't have a funnel but really wanted funnel cake so I just poured it from the measuring cup but yeah I poured too much 1/3 the recipe of 1egg of mix and yeah that didn't go well it got heavy it soaked up the oil and when done even tho it looked ok it was not cooked in the inside yuk. However the small drop I used to test if the oil was hot was delicious with powdered sugar so the recipe is good. Just be carefully and pour it all in like I did. Will attempt to do little droplets another time or maybe I'll get a funnel

    • @croutoncrackerjacks
      @croutoncrackerjacks  8 років тому +6

Yes. Baking powder is never an optional ingredient. It's what creates the tiny little air pockets in the dough when it cooks. Without it you're going to have hard as a rock strands of dough that will break a tooth when you try to bite into it.

    • @croutoncrackerjacks

***** There is no comparison between funnel cakes using pancake mix and funnel cakes using a funnel cake recipe. It's like trying to use pizza crust dough to make doughnuts. Sure you'll have fried pieces of bread but if you want good doughnuts you'll use a doughnut specific recipe.

Yes. If you dont have any you can take some Baking soda and mix it with some acid like vinager or lemon juice since Baking powder is baking soda with the acid already added. It works since the baking soda and vinager experiment. Which is very well known creates the air bubbles needed just like the powder. Its science.

That's not shell. It's called chalaza and every egg has it. It keeps the yolk in the center of the white so chicks don't get stuck on the side of the shell as they grow. Also, the fresher the egg, the larger the chalaza. Over time it breaks down which is why old eggs used for hard boiling have yolks on one end and not in the center. And there's your science lesson for the day.
