Guys I work at McDonald's too. This is NOT a video on daily cleaning. This is a deeper cleaning that is only done once a quarter. We recently did it in our restaurants in preparation for the Hot Off the Grill initiative and it does work really well.
I too work for McDonald's/Springfield and what your seeing is done every morning at 4am prior to change over to breakfast if it's none being done in your store per policy consult a manager.....

A.k.a deep clean to remove ALL carbon build up. Regular nightly cleanings are similar BUT simpler and should be printed on in store materials available for you to reference.
This is grill recovery that should be done IF you have a lot of carbon buildup on your grill, especially on the clams. Monthly is the most accurate time to do this procedure. If daily grill cleaning is PROPERLY being administered then this procedure is done as needed.

Bruh it was weird seeing those sheets on the bottom of the grill, at my McDonald's we don't use those, we just cook strait on the grill, i get this could just be there restraunt, bjt this is waaaay different then my restraunt, and it could be beacuse it's in recovery mode, we just switch it to clean mode
The lower platen sheets are often for things like cooking eggs or grilled chicken. This video is from 2015, procedures have since changed. With the introduction of the combi ovens they now want us to cook the RTH eggs and grilled chicken in the combi or put eggs on an egg cooker and I think they also want scrambled to stay off the grill. My store still does scramble on the grill because it's easier than cooking it on that teeny tiny cooker surface and you lose less product. You wouldn't want to cook burgers or sausage on those lower teflons because when it's time to remove them your spatula blades will perforate the teflon.
Those sheets u talking bout called teflon only use mostly for breakfast they there for eggs round eggs/folded eggs/scramble eggs doing lunch thier use for grill chicken
The teflons on the bottom cook surface where only trialed in America. I dont think they still do it. Recovery is exactly the same as clean mode the only differences are 1: the name 2: clean mode will constantly beep when at the correct temp and 3: RECOVERY has to be programmed onto the controller when clean mode is on there already by default.
This is not full grill recovery. This is top half. Not backside, heat shield walls, vents, grease traps, back grease traps and all that. This is cleaner than most but yeah, as a manager this looks easier than it usually is.
We do something similar for our grills, once at about 3pm and another during the overnight shift as we're a 24/7 store. But if you're not performing your grill maintenance like this, then you're not doing your job right. Unless you're referring to just the grill steam clean, scrape and squeegee done usually every 30 minutes.

that's true, cracks in front of bottom platens shows up because people use cold water poured directly on the platen. Well known issue on taylor 3-platen intelligap grills. Welding is costly.
They probably don't clean it off properly. You should wipe it off twice after cleaning and in the mornings before open. Also should be rinsed off periodically (not with the grill cleaner).
It's 100% possible to deep clean your mcd grills like this EVERY day. You do one side of the grill at a time and you clean FAST. It's not hard. Stop being lazy.

The heat activated cleaner works better on 10:1 as the grill is hot enough for the cleaner to work. This is why no one uses recovery cleaning mode.

All electronics can glitch, just recently, one of our upper plattens wouldnt work properly, we hadnto get the company to come put and recalibrate it
