  • This is cereal milk Panna Cotta, the brilliant invention from the genius mind of Cristina Tosi of Milk Bar that launched an empire and was certainly an evolution of the pan a cotta. It's incredibly easy to make and a make-ahead dessert, it's refreshing, it's nostalgic, and but before we make cereal milk Panna Cotta, we need to learn what the hell Panna Cotta is in the first place so lets just jump right into it.

    Oddly enough I’ve found that steeping earl grey tea in the cream when heating up gives a really strong cereal milk taste.

    I had a 38 seat Bistro and made Panna Cotta all the time. Try mixing in some of the pureed strawberries before you refrigerate and set up the panna cotta, then serve with sliced strawberries and it's a tad more intense! Easy to play with as you say!

    I used Tosi's cereal milk recipe to make a batch of clarified milk punch several years ago. The corn flakes with bourbon was such an amazing flavor combination that I would be tempted to try it here too.

      @@meow-meow-beans got the idea after falling down a rabbit hole of Victorian Era "cocktails." I did Cinnamon Toast Crunch with white rum and a peanut butter captain crunch with rye too. All three were pretty damn good, but I think the bourbon and cornflakes would translate best into a dessert of this nature.

    I was gonna say it will work with the cream base as well, I would just add more cereal. I’ve made cereal milk ice cream and the ice cream base (it was an 18%milk fat base) soaked up the flavor beautifully. Fruity pebbles and honeycomb cereals both leave really good flavors and I bet that a honeycomb panna cotta would just be to die for

    Awesome idea. I have to try the cereal version. I make panna cotta dairy free with coconut milk because many of my friends and my fiancée can’t have dairy.

    I love how you breakdown and explain using different dairies for the Panna Cotta. The buttermilk Panna Cotta with strawberries had me drooling. I don't eat cereal very much anymore but I'll try anything by Christina Tosi, and cornflake infused Panna Cotta sounds like a, hell yeah to me 😎 Especially topped with strawberries and a cornflake and corn pop crunch 🤤 #forgeddaboutit 🤌 Nice, thorough and informative video as always, Steve.     That looks good. Maybe you could try a funnel if you want to pour into glasses next time. That might cut down on the splashing the sides of the glass for you? Because it looked very nice in the glass.

      @@ladyomiwankenobi it was so good! The cereal is ok, but it's just not the same lol i actually bought some dunkaroos on amazon, still werent the same lol oh the haddock is amazing! My grandfather used to make it like that, he passed it to my mom and she passed it to me. It's really good if you leave some chunks of corn flakes. They get so crispy and delicious! I definitely recommend trying it!

    Looks quite nice, I would look for some options to increase the protein in that, but totally would give it a chance.

    I always thought traditional Panna Cotta uses no gelatine/binding agents at all - does anyone know how it's supposed to set that way? (or maybe that's complete bogus and there's always been a binder)

      I just don't see how cream could possibly set all by itself, even if cooked. Maybe people used to do it with cornstarch like they do it with Mahlabia?

      @@Grilnid Yes, I was wondering the same. I mean I know that sugar thickens a little bit (like with jam) when cooled, but it would still not really set. Maybe cream used to be made differently? And maybe it wasn't originally meant to be turned out but simply eaten out of the glass anyway?
      So many questions :D

    I´ve always wonderd what they do with all the cereal leftovers after they stepped it in the milk?
    Seems like such a waste to just throw it away, especially when cereal milk (like you get after eating cereal not the Milk Bar version because we don´t have that here in Sweden so i have never tried it) in my opinion mostly taste like sugary milk.
