Zarda (Sweet Rice) Eid ul Adha Special

  • Ingredients:
    - 4 cups sella rice
    - 2 tsp yellow/orange food color
    - 2 star anise
    - 5 cloves
    - 4 green cardamoms
    - 2 lemon slices
    - 1/2 inch cinnamon stick
    - 2 bay leaves
    - 1/2 cup butter or ghee
    - 1 cup milk
    - 4 cups fine granulated sugar
    - 1/4 cup raisins
    - 1/4 cup peeled almonds
    - 1/4 cup pistachios or cashews
    - 1/4 cup coconut slices
    - 5-6 mini gulab jamun for garnish
    - Edible silver leaf
    Instructions:
    1. Wash the rice with cold water, changing the water 3-4 times until it runs almost clear. Allow the rice to soak for 2-3 hours, then drain the water.
    2. Boil water in a large wide cooking vessel and add lemon slices, green cardamom, cloves, star anise, cinnamon stick, and bay leaves.
    3. Once the water boils, add the food coloring and soaked rice. Boil the rice until it is 90% cooked. Be careful not to overcook the rice. Drain the rice using a fine colander.
    4. In the same cooking pot, melt butter or ghee. Add sugar and milk, and cook until the sugar is fully melted and starts bubbling.
    5. Add the boiled rice to the pot and mix gently to ensure the sugar is evenly distributed among the rice grains. The sugar will melt and create a slightly liquid consistency in the zarda.
    6. Add raisins, almonds, coconut slices, and pistachios on top of the rice. Cover the pot with a damp cloth or cotton napkin and then tightly with the lid.
    7. Allow the zarda to cook on low-medium heat for 5 minutes. Then reduce the heat to the lowest setting and let it sit for another 15 minutes.
    8. Remove the lid and gently toss the zarda using a saucer or spatula. Garnish with mini gulab jamun, silvered almonds, pistachios, and edible silver leaf.
    Notes:
    - Use fine granulated sugar for this recipe to achieve the desired sweetness and texture.
    - You can customize the nuts used in the zarda based on your preference.
    - Choose high-quality sella or basmati rice for the best results.
    - Use a large cooking pot that is wide rather than high to allow the rice to cook evenly without breaking.
    - Avoid stirring the zarda too much to help maintain the shape of each rice grain.
    - When reheating leftovers, sprinkle some cold milk before microwaving or reheating in the oven to retain moisture and prevent the rice from drying out.

    This is not Zarda as it is not zard(yellow) this is "Oranga"as it is Orange
