He was a stunt coordinator for the movie, and trained the entire cast in their choreography. A guest cameo is a pretty good gig on top of that, besides who would he play as?

Normally, Vega fights with a claw. She took of Ryu's shirt so Vega wouldn't have any resistance slashing or stabbing. That's my guess.
