  • Once a common fixture of small farms across America, as Rachel Kornstein of Boondockers Farm explains, they are now sadly on the endangered species list. Most chickens today are a Cornish Cross breed that grow fast and are slaughtered young. In contrast, the Delaware is slaughtered at a mature age and has developed a pronounced flavor from a combination of being pastured raised and allowing to grow older. They must be cooked differently than the standard broiler chicken and Rachel shares some tips on how to cook them. For additional information about the Delaware breed, read this Wikipedia article (en.wikipedia.org/wiki/Delawar....

Thank goodness for some honesty in chicken raising. Heritage chickens are real chickens. I suggest that you don't expect real flavour from new varieties that aren't bred for taste.

thank you for this report. so many of our heritage breeds of chickens and turkeys are going away, and this is truly sad. thanks to those who are out there protecting, raising and trying to educate about the heritage breeds. it is history and is being lost incredbly fast. sad actually.

I noticed some issues with these Delawares. First there's too many roosters for the number of females. This can be easily seen in the condition of the females feathers. Another is a lack of attention to the specifics of the the breed as far as confirmation and color goes. There shouldn't be silver in the white plumage of the birds especially the males. They should be large and big framed birds with wider spread tail feathers. The females should have larger and more feminine heads and somewhat smoother combs. I think paying attention to the American Standard of Perfection for the Delaware breed and following it closely would work well for you. Also, Delawares mated to New Hamps or Rhode Island Reds will produce sex linked chicks that produce excellent broilers and lots of hybrid vigor. Sex linked means you can tell the pullets from the males at hatching by the color of the chicks. Perhaps start selecting hens and cocks according to the APA Standard of P. and eventually developing a breeding pen for your replacements. There are some exhibition folks breeding these for exhibiting and you might start with a male that way. Raise lots of them and cull HARD. You get your fine points from the male and your size from the hens as a rule. Doing this would greatly improve your breed. Very nice to see someone gung ho for the Delawares!! J

"Better cooked low and slow" is a euphemism for "that's one tough as nails bird."

So these birds can be used to hatch more chicks to live sustainably? And can you cook them in any other way than in water?

I thought Delaware were harvest ready at 12 weeks? Are some youtuber's spreading false info?
Edit: I find the flavor of any of the birds I've tabled to be leaps and bounds better than anything I've bought in the store - even so called non-gmo or free ranged. What they eat matters. I guess age does as well?

"muscle"??!? That's what cornish cros also have. A bit watery perhaps, but it's as much muscle as Delawares
