Hello from the southern US. What a lovely dish you made. I wanted to share my favorite fall squash recipe with you. "Stuffed Acorn Squash", but works well with a lot of other winter squash. 2 acorn squash, (halved, seeded and unpeeled). 1 pound of ground sausage, 1 small onion chopped, 1 half stalk of celery chopped, 1 apple peel and cubed, 1 egg, 1/2 cup of sour cream, 1/4 cup chopped pecans, grated cheddar cheese. Bake halved squash for 45 minutes at 350 degrees until tender. Sauté sausage, onion, celery together, add apples cubes and pecans last few minutes. Mix egg and sour cream then add to the meat mixture. Fill the squash with the meat mixture and bake for 20 minutes at 350 degrees. Sprinkle with grated cheddar cheese and bake fore 5 minutes more. I only know US equivalents for temps. I have used hot and mild sausage, added different herbs, and even baked it all together with cubed butternut squash. I hope you try it. It is a family favorite for us!
Yum. This looks delicious. I've made a lot of variations of this recipe (I love butternut squash...really all fall squash and pumpkins). One suggestion might be to add a bit of smoked paprika which would give it an additional depth of flavor.
My grandmother used butternut squash as a substitute for pumpkin in her pumpkin pies. She, of course, called them butternut squash pies. Far superior to pumpkin, for sure!

Thank you so much! We actually lived pretty far from the sea in The Netherlands and I've never really appreciated the North Sea as much as it probably deserves. So I don't miss it and when I do want to go to the sea, I go to Southern France to the Mediterranean which is about 5-6. hours drive.
Thanks! The Apron is from a Dutch store “Zeeman”. I can’t wear anything around my neck or halter neck tops because of a physical injury and aprons always make my neck hurt. But this one wraps around the shoulders. It doesn’t look as nice but it is way more comfortable! I actually talked about it when shooting the video but edited it out because it didn’t really fit in the flow of the vlog. They do have stores here in France as well but not sure if you could order from the US.
Hello again. Do you have a worm farm in your garden to use your vegetable peelings? With such a large garden and vegetables growing, I guess you would have. The liquid fertiliser and castings the works produce are like garden gold.
Not yet, we only grow a few vegetables and are still consumed by building works but we’re going to extend our vegetable garden and put more of those kind of things in place.

I prefer it too! And you don't necessarily need to peel it (although I do), so when in a rush it is easier to cook with!
