If I use fast-rising yeast vs active dry yeast, do I still need to warm the milk to 180 degrees F or can I just warm it up to 110 degrees F. As always, really informative and fun. Have a great Tuesday.
Hi Alvin - thanks for your comment! Hope you're well. Heating milk to 180 F is more about deactivating whey proteins in the milk to encourage gluten development (affects springy texture of the bread/doughnut after kneading), and not about the yeast. Hope this helps! :)

I always make pan de sal and heats my milk for 2.5 minutes just to give me time to prep other ingredients while waiting for the milk to cool down between 110 F and 115 F. I will adopt your technique, next time, by heating it for 3 minutes/180 F. Thank you for sharing. Hope you are also doing well☀️☺️

Using vanilla extract instead of ube extract would result in regular glazed doughnuts with a white transparent glaze.
