Cool idea. I usually a few dowels between the pocket screws. Don’t even have to glue them.

You ideally want to have the screws going into the middle of the board, and not out towards the edge.

Not necessarily. The box I was building needs to look better on the outside.

Way over thinking it...
In 13 years of cabinet building, I've glued panels less than 5 times (except drawers)
Pocketholes should also be going towards the middle of the board, not out to the edges.
Better clamping, and anticipating the 'movement'.
On wider boards, do the first screw on one end, and then set clamps on each screw along the joint,
