    I would only add that make sure that the ring is positioned so that the lid closes evenly. One my BJ III I have to slide it forward some so that the ring is sealed against the lid when closed.

      Great point, Brian. That’s an important tip, easy to have an air gap if you’re not paying attention and then your fire will get too hot. Thanks for the comment.

      Thanks so much! Ran first part for 90 mins before carving, then another 45 mins, then another hour for the last part. But it always depends, I would check with a thermometer as you go. Let me know how it goes for you!
