Ridge Gourd Kadaiyal | பீர்க்கங்காய் கடையல் | Peerkangai Kadaiyal

  • This video is about village style mashed ridge gourd preparation called Peerkankai Kadaiyal . It is a typical Tamil Nadu style preparation,Kadaiyal means mashing together using a wooden masher ( Mathu) tempered with Vadagam .Vadagam is consist of mixed tempering spices ,pounded together and then sun dried .its generally eaten with hot steam rice .
    Ingredients
    Ridge gourd - 3 no’s
    Gingelly oil - 40 ml
    Shallots - 25 no’s
    Tomatoes - 2
    Green Chillies - 8 no’s
    Salt - To Taste
    Turmeric powder - 1/4 Tsp
    Tamarind - big gooseberry size
    Curry leaves - 2 sprigs
    Coriander leaves - 2 springs
    Tempering
    Vadagam. - 2 no’s
    Dry Chillies - 2
    Or
    Mustard seeds - 1/2 Tsp
    Urad Dal - 1 Tsp
    Fenugreek seeds - 1/4 Tsp
    Cumin seeds - 1 Tsp
    Shallots - 3 to 4 no’s
    Garlic - 3 to 4 pods
    Dry Chillies - 2
    Curry leaves - 2 springs
    Coriander leaves - 2 springs
