    That is an excellent educational film for those that don't know how to butcher a whole deer. Especially in relation to tools, that's all I use, exactly the same setup. Might have helped some newbies how to break it up into main joints, quarters and loin's, some wouldn't have a clue. Just one question, what is a meat scientist?

      Hi Richard, thank you for the positive feedback! Many land grant universities offer 2-year, 4-year, and even graduate programs in meat science - the study of beef, pork, lamb, and poultry. Just like animal scientists who explore nutrition, genetics, breeding, physiology (and so much more) of livestock species, meat scientists explore how those same topics influence muscle composition, meat quality, carcass yield (and so much more!) on meat products.
