I'm seeing a Remco Evenpoel who seems more mature in his riding than previous races. He learned to stay out of sight of the camera's, and that's a good thing in a 3 week race.

It's not even close to being over, but I agree with the last part of your comment. I don't think he had any expectations to easily win the tour like most people seem to think. He may not plan on winning it at all, seems happy to just be competitive which is a big win
I mean we have an ITT later that is way more hilly (double the climb) and only flat for the last 5km which will suit him way more. Everything can happen in the last week. u can easily lose 4-5 minutes there. Also 14/15 are pretty tough.
Jonas is doing great so far and it is way too early. The prior mountain stages (avg 5.2%) and todays ITT (mostly flat) favored other riders, like Tadej. Some of the upcoming mountain stages (14, 15 and 17 in particular) will favor a fit Jonas in-theory. The climbs are steeper (~ 8% grade in some climbs), have uphill finishes, and the weather will be hotter. The last ITT also involves a climb. It is way too early to conclude anything about this years Tour as the real challenges are still a week away.

Pog has lost some upper body weight recently, so I believe the difference is lower. His strength is also probably controlled ride around FTP with final surge/kick, but on long climb where they get to VO2max zone during attacks, Pog is better, in recovering from these Z5/Z6 attacks as well...
Also, the position on TT bike is specific with muscles working differently, breathing is more difficult. So, theoretically, it suits Remco more, whereas Pog is not able to produce same power output as on standard bike - just speculation.
