Sounds like a fun challenge to master applique . It being repetitive means we could get good at it and then finally we may be able to do one of those gorgeous backdrop pieces you made!
There is a Curve Master presser foot that makes sewing drunkards path much easier. I think I paid around $20 for mine, just another option if you don’t want to appliqué.
I imagine that it stays open. The two pieces are already sewn together like a regular block, so there’s no need for another layer. The square is cut into quarters anyway, leaving two sides open until the block is sewn together.

How do you sew it closed after you remove the freezer paper? Loved tutorial, but confused as to how to close back after removing paper.

Yes, you can buy it at Supermarkets. You need to use freezer paper for it's "sticking" capabilities.
