I've been making beef stew once a week for a month or so and you just showed me how to up my game,... I was pretty close, I've been using chicken broth also, found that with the spices beef stock became a little much.
I am going to make the pie, grew up on pot pies and I love a good one.!
Since you are cooling down Stew would a person be able to put the dough in the bottom of the pan, load filling and top like a real pie?

I made this pie about 5 months ago. Loved it! I just got back from a trip to Ireland and had their version of it. This recipe was every bit as good as the one in Ireland! Great recipe!
I was going to do a pot roast and remembered the pearl onions in this recipe. I changed course and repeated this recipe. It is absolutely wonderful, possibly the best thing you have done, though the list is long of your recipes that I love. thank you for your simple prep yet wonderful flavors that you have brought into my cooking.

Alton Brown did an experiment where he weighed mushrooms then rinsed them in water then weighed them again, and they did NOT soak up water. He blinded me with science.

A decade ago, Chopped said this washed flavor away...I told my Wife, if you wash mushrooms for an hour, then maybe.

I made this yesterday, substituting with a jalapeno cornbread topping and it was A-F'N-MAZING!! This will definitely be going into the normal rotation. I think next time I'll try it with a croissant topping. Thanks so much for the fantastic recipes all the time! Love you guys!

Love this recipe. Worth also trying this as a full pie with a base as well as a top. Or if you're into something different why not make this as a suet pudding. It is fabulous!

Steak pie is a national dish in Scotland, it's strongly associated with Hogmanay (New Year) though it's eaten throughout the year.

Tried this recipe 2 nights ago with mashed potatoes and Yorkshire pudding and it was so good we put the left overs into a pie and had it the next night - delicious!! Thanks Sam
Awesome to see this well loved dish in the UK, Australia & New Zealand showcased here. Better still is the single serve 'hand pie', a delicious mix of quality beef, seasonings and gravy encased in pastry. Add a layer of cheese (cheddar or maybe blue) before putting the pastry lid on, or cook the beef with mushroom.

Oh! BTW...Alton Brown did an experiment about washing mushrooms. The mushrooms, after being washed in water, did not weigh any more after being washed. Huh. I'm going to try the weigh, wash, weigh ... I'll let you know. ❤️
We did this test as well, at a mid-tier chain restaurant back in the day back before Alton was on TV (let alone cable). Testing verified this bit of 'kitchen wisdom' was nothing but a way you say to went to culinary school. (Don't know if they still teach this nonsense) They will absorb maybe 2% by weight - completely insignificant. Varies by type of mushroom. But the white buttons most people use? Rinsing will have precisely zero effect, other than clean them off...

That looks amazing and I am making it soon, but when the weather turns bad...in San Diego? Lower 70's during the day and upper 40's at night is pretty harsh, lol. I live near Chicago and it was -1 last week. This is definitely perfect for that sort of weather, very nice.
Locals wore ski jackets & knee high boots when it dropped to 70 degrees near Miami! It cracked me up as I came from a northern city where icy roads were the issue in winter.

Made this tonight, it was excellent!!! My store didn't have the frozen pearl onions so I used cocktail onions and rinsed the.m, they actually added another dimension! Next time I make this I want to try making a mashed potato topper :-) thank you Sam!!!

Tip: If you ever cut bits off of mushrooms, save them in the freezer and over time collect a bunch of mushroom bits. You can now use them to make a stock or catsup.

Delicious looking stew! I'd suggest using mushroom stock if you REALLY like mushrooms like I do.
We in the Netherlands have them in a jar and they are pickeled, Just like the gurkins. We trow those is and the vinigar helps to break down the fibres in the chuck steak.

As a Scotsman, I approve of this video! I just made a steak pie for New Year's dinner - in Scotland it's traditional on New Year's Day and at funerals. 😄 Instead of Guinness, though, may I suggest McEwan's Scotch Ale or Newcastle Brown Ale? Trust me, you won't regret it. Guinness is too sweet for steak pie. I'm not a fan of mushrooms but I'm sure they're delicious in there if you like them. I put frozen green peas in the pie instead, along with the carrots and onions.
...with a side of mashed tatties and glass bottle of irn bru. 😃

Sam, you live here in SD, so you can buy a Bay Leaf bush at Home Depot and grow fresh leaves. I have one in my yard, also known a a Laurel Tree. Fresh is the only way to go and it makes a great aroma (fragrance) when slightly toasted in the house. Big and long time fan of your development as a fantastic CHEF! (Don’t tell your fans, but 70 degrees here today!)

My mom used to cook the pastry separately so they’d be little puff pastry pillows. Good if you have a big family and everyone wants extra pastry top!

What about the lower pastry and the blind baking? Suet! Delicious and stands up to heat abuse rather better than puff. Suet on the bottom. Top puff? Might have to try that.

Looks great. I'd choose to use a smaller bowl and line it with the puff pastry first, then add some stew then, another puff pastry on top joining the bottom layers edges. The bowl will cook the lower layer fairly good while the top layer will get nice and flaky crispy browned. Yum
