Potash, rather has higher potassium rather than sodium. Hence the name. It cooks food quicker due to the higher pH and therefoe uses less energy to cook food making it cheaper and quicker to release nutrients in food that would require lots of digestion.

You can use palmash that is burnt part of the palm. And you can whisk the palm oil with hot water
