I think if you have times when you don’t have other creative people around you then the machine learning can be a nice little virtual assistant to keep you engaged. However I don’t think you should allow it to dictate too much of the direction of the way the song is going. You have to pull back a little to allow for the human touch of the creativity to be natural. Like he said the little human accidentals and playing styles you may stumble upon when doing takes can make all the difference. I think the punch in and out and the takes folder is a good thing for music artists and producers.
Things like stacks, are also good to use. I personally have my keyboard and Maschine pads by N.I (Native instruments) which I use for chords mode, I can quantise by 50 or 100% and I can also add swing to loosen it up a little and make the flow sounds a little less stiff. Just a quick note, in logic you also have velocity randomiser. It can be a good starting point for a sound and you can touch the notes that don’t have velocity that are slightly off.
I think things like beat match for parts helps for the track to flow more streamlined better also. Once you add all these things together then your music will just sound more realistic and spontaneous.
