Hi, both ways are correct. You do definitely need the /r/, but we often reduce the diphthong /ʊr/ to /ər/ instead. The same thing happens with the word "sure."
What's the difference between using /məˈtʃərəti/ or /məˈtʃərɪti/ to read “maturity”? The former is used in dictionary, but I find Americans prefer the latter...?? Many words ending with "ity" have this phenomenon. So confused 🤔

You'll also hear both pronunciations, and maybe a vowel sound that's slightly in between the two. For example, words like "before" or "return" can have /ɪ/ or /ə/ or something in between for the first syllable's vowel. The important thing is that the vowel needs to be lax and unstressed, and short in duration.
