- Chef Anna Olson demonstrates how to make her delicious Green Apple Sorbet recipe! Follow along with the recipe below and you will be able enjoy this incredible dish for yourself!

Makes about 3 cups (750 mL)
Ingredients
Simple syrup
1 cup (200 g) granulated sugar
1 cup 250 mL water
Sorbet
3 green apples
2 Tbsp (30 mL) lemon juice
1 cup (250 mL) simple syrup
1 egg white, lightly whisked (optional*)
1. For the simple syrup, bring the sugar and water to a simmer in a small saucepan over medium-high heat, stirring occasionally until the sugar has dissolved. Remove from the heat, cool and then chill completely before using.
2. For the sorbet, cut the apples into quarters (skin-on) and press through a juicer. Measure out 1 ¼ cups (310 mL) of juice and immediately stir in the lemon juice. If you do not have a juicer, then use 4 apples, cored, and puree them in a blender, straining the purée to extract the juice. Stir in the simple syrup and the egg white.
3. Start your ice cream maker and pour in the sorbet base into the maker and freeze following the manufacturer’s instructions. If firm enough, you can spoon the sorbet into cups to serve, or scrape the sorbet into a container and freeze until set.
The sorbet will keep for up to a week in the freezer.
* The egg white helps to aerate the sorbet as it spins, creating a fine texture that makes the sorbet scoop-able even after it is firmly frozen (without it, homemade sorbets can become quite hard in the freezer). If a concern, you can use a pasteurized egg white (2 Tbsp/30 mL from a carton) or omit without compromising the taste.

You won't regret the investment because it does make a difference. I bought a Kitchenaid model (middle of the range in price) one seven years ago and it is still going strong even though I use it a lot. I thought I'd share share that with you as it's nice to get a recommendation sometimes. I mainly use it for sorbet but a rich vanilla ice cream is a good treat occasionally.

Nice work! Great appliance for getting whipped sorbet texture. You can get the full flavor of the apple and not just the squeezed out juice by making a puree of the entire apple (or entire fruit with its skin) along with any other additions that can be herbs, honey, maple, vegetables, or other edible greens in the blender. That way, you'll get a richer and more robust flavor creamy sorbet.
I think I might die of happiness if I can make this at home.

of course it will. you might have to adjust the syrup to fruit juice ratio depending on the sweetness of the fruit juice and on the water content in the fruit juice.

I used your chocolate gelato on my first use of my ice cream attachment and it was so good. Trying this next. I've got the KitchenAid ice cream attachment and it has a permanent shelf in my upright freezer. Luckily I have a juicer I was just given and was going to pass it to someone else. Keeping it now that I've got a use for it.

I ground the apples in my food processor and strained out the juice. the juice browned some. I didn't have lemon on hand so I added just a bit of white wine as an acid, and a drop of green food color (Yikes!) . It actually came up nicely frosty, freezing it lightened the color (hand churned). At first I thought it was too sweet, but it transformed in flavor and my guests went wild over it.

Hi Anna, is that a Kitchen Aid mixer? If so, I didn't realize that you can buy a paddle attachment for the ice cream maker. What ice cream mixer bowl is that?

Yes, you can chill a metal bowl, put your mix in and hand blend, put back in the freezer for an hour and take it back out, blend again and do that 2 more times before serving - takes a little longer but not too bad. If you want more fibre you could also cut your green apple into small cubes and freeze these then add them to a food processor with the simple syrup and blend which is much quicker
So THAT's the secret -- the egg white!!!

Anyone tried to make this? After I left it at my ice cream machine for 30-40minutes it still was mostly just juice. Freezing it and I just got a block of “ice” juice, I didn’t get the transformation of texture on the ice cream machine... anyone knows why? Maybe add 2 egg whites because mine were smaller? Maybe my machine doesn’t spin as fast só doesn’t create that texture?
