Aapki recipe udipi style sambhar ki kaafi authentic hai. Sabse imp part hai ki aapne sambhar ko sahi consistency mein rakha hai nahi to north indians usmein daal humesha zyaada hi daal dene ki galti karte hai.
Byadagi chilli ko aap kashmiri chilli ki jagah pe bhi use kar sakti hai kyunki banagalore mein woh easily mil jaayega. Til ka tel sambhar ke liye best hota hai - last mein aap ghee ka chhonk bhi laga sakte hai.
Also sabziyan sambhar mein khade hi rehne chahiye.. Isi liye imli ke paani mein ubalte hai so that woh mash na ho jaaye. Lauki hum log sambhar mein nahi daalte hai - uski jagah agar aap kaddu ya petha use karengi to better taste aayega.
Sambhar masala mein aap jeera bhi 1 tbsp mila sakte ho - south ke har ek region aur family ka sambhar masala alag hota hai.. Kabhi aap wet masala (paste) se banne waala sambhar jis ko hum "varathu arrichu" Sambhar bolte hai, woh bhi try karna.

We are from North and East.,...I really miss our Bangalore years very much ...The taste of Food which is in Bangalore can not be matched elsewhere...We stayed in Chandra Layout Vijaya Nagar and HSR Layout.

I'm a South Indian who has been living in Bangalore for years. Bangalore is infact my home. The ingredients for the sambar powder seemed a bit unusual... especially the kashmiri red chilli. The process was also very different. The tamrind water has to cook together with the sambar powder before adding the dal.
But adding mustard oil for sambar was a bit too much for the south Indian in me 😂😅
I can't say this is authentic sambar, but hell, if it tastes good and people like it who am I to judge? 😀

As much I know my mom n ajji never used rice or Kashmir chilli for.sambar masala..this method is of Tamil Nadu style..
I am a Tamilian and we don't use rice for the mixture. But sometimes, if the sambar turns out too watery, then we mix a slurry of rice powder. But only when the sambar is too watery. Not otherwise.
I guess the Kashmiri red chillis are used instead of Byadige. Byadige chillies and Kashmiri chillies are anyway the same...at least these days...
I guess there are dozens of ways of making sambar...with one ingredient less or an ingredient more.
But the mustard oil in sambar 😅
It feels like using coconut oil for bhaingan ka bharta 😂

I am a bangalorean mam you should add dry coconut to the sambar powder and fresh coconut while boiling the sambar
