RESPECT!

Go in catania in sicily you will neva found a pizza like there 1 because the product are super, 2 because the oven (most of them) ar made with the black stones from Etna vulcano... So you can imagine the taste that can give at the dough 😋

Is a different process , and you right in Sicily the dough , in most places , feels “heavier “on the stomach . Has lower hydration to begin with . However now there is a smaller movement of pizzaioli who serve Neapolitan contemporary style
