If I want to bake buns or cookies with this ube jam as fillings, will it affect the buns/cookies' shelf life? Ube Jam needs to be refrigerated. If you makes buns, yes, it will need to be consumed within 3 days or refrigerate the buns as you can always warm it up. For cookies, you will be mixing the jam with the cookie batter anyway.

Now, No need to use food coloring. You can buy an UBE condensed milk at any asian stores. Sometimes they are hard to find, but where I live there are an abundance in stock.

You don't need food color, the jam will darken naturally as the milk solids in the milk and butter, the sugar, and the ube itself are toasted by long cooking.
Etong ginawa ko on Sept 4, I placed it in the fridge using the container on the video and up to now, of the containers kasi I've been testing it is still good. No molds yet.
1 week or 2 weeks in airtight container and that depends sa temp accuracy ng ref mo. I have learned that nung luma ang ref ko ang bilis masira ng food, gulay madali malanta pero I got a new one and it has digital temp in front na I can set, since then mas matagal ang food sa ref.
At that time walang ube condensed milk na itinitinda dito sa US. Also the ube is flavor and not just food color if you look at the McCormick ube flavor's label.
I made this recipe on Sept 5. Placed in jars shown on the video and kept in the fridge. Up to this date I still have 2 jars left and they are still good. No molds.
