    So just made this although without gelatine and with half the coconut flour adding almond flour for a full 1/4 cup since I didn’t have enough coconut. Awesome and easy! Thanks Guys!

    I've made this no less than two dozen times, and it's STILL my favorite keto desert. Sometimes I add lemon zest to both layers, and sometimes a little lemon juice or lemon extract. Most of the time I just make it the regular way, and they're all equally awesome.

    Omg I can't wait to make thisI love this dessert! If you can add some cocoa powder to the cake part & peanut butter to the top it's like a Reeses version and is amazing!

    I made brownies last night from a 100% cocoa baking bar, cauliflower, an egg, and pure stevia. The cauliflower worked like a flower, and it tasted like a brownie, I couldn't even tell there was cauliflower. You guys should experiment with the idea.

    It's a cake that's popular in St. Louis. I lived there for a couple years and hadn't heard of it until I moved there. I never tried it, though, because keto. So, this is a good opportunity!

    Thank you both for this recipe. Used to love this b4 I started keto. Never expected to have a keto version of it. Made it last night before dinner. I let it cool while my hubby and I ate dinner. You said in your notes that it is best after 2 hours but letting it cool around 20 minutes was fine. Well I tried it right after dinner and thought it to be a fail. I put it in the fridge to finish cooling. At lunch today when breaking my fast, I didnt feel like making anything and saw the ooey gooey in the fridge and thought why not try some before I toss it? It was fantastic! Major thumbs up! If anyone does decide to make it take their advice and let it cool for the two hours, in the fridge if possible. Now I have an army of great desserts. Thumbs up and thanks again. Love your videos. Btw, (I might be a bit late on this but...) congrats on the up and coming new addition to the family.

    I made this without the gelatin and added small amount of 100% dark chocolate chips. Wow!! So so so amazing!! Even better the next day out of the fridge.

    This is my favorite keto recipe I’ve made yet. Really good! I subbed almond flour for coconut flour and used double the erythratol for the filling because I skipped the stevia. It is slightly greasy tasting but still so good! I will probably use a little less butter next time so it’s not leaking. I like it slightly warmed so you get the gooey texture inside. It tastes like lightly sweetened custard pie. I’m also going to double the cake later on the bottom because it adds a great texture to the cake and I would love to have more of it. I don’t bake much but I will be baking this again soon.

    Tried it over the weekend and really enjoyed it! Was on the road so didn't have some of the gear that I have at home but I made it work. Bread mold instead of circular. Used less stevia too. 20 vs 50 drops. Came out great regardless. Thanks for this.

    I started keto in February. Just found you guys and tried this. It is so delicious!! My favorite !! I used plain gelatin because I couldn't find beef. I also didn't realize I was out of vanilla. So, I used 1/4 teaspoon of lemon in the crust and custard instead. DEVINE!!

    Cheesecake pro tip: cook on a baking pan with water. Moisture helps it cook more evenly.

      Regardless of what he mentions, a butter cake is not like a cheese cake Ive eaten many many real ones and cracking wouldnt be something to consider at all

    Hola Matt, I made this cake and came out awesome! Thank you for making yummy recipes and stay pretty low in the carbs. Many channels in the name of Keto make recipes that are not healthy. They must well eat sugar if they are going to add so much sweeteners and other "special ingredients'.

    Made this for my husband's birthday and it was a big hit! Will definitely be making this recipe again for special occasions. Some of the batter leaked out of the springform pan onto the bottom of the oven, which I didn't notice, and the next time I used the oven it created a smoke bomb in my house....but it was still worth it!

    I made this today and HOLY COW! It. Is. Good! I tasted tested it 30 min out of oven, left to cool to room temp for two hours and refrigerated. My favorite was refrigerated. Thanks for your work on this recipe.

    A rubber spatula is your best friend for creaming together butter and cream cheese, unless they’re both extremely softened.
    Also you can wrap the bottom of a wine bottle I plastic wrap and use that to press down the crust layer.

    I recently got into Keto, made a coconut cream pie with cream cheese, used too much X-gum, tried this recipe and used the pie instead of the cream cheese, also added some whipping cream, came out excellent

    Want to make it easier mixing? I melted the butter!!! Soo much easier. And I also added some crushed almonds and used monk fruit sweetener at half the dose that you recommend here. DELICIOUS.

      I would like to also add they saved my husband and his job he is a truck driver and was having issues keeping his blood sugar in check even with oral medication, the doctor told him if he didn't get a handle on it he would be on insulin and you can't pass a DOT physical and drive if you take insulin. That scared him enough to let me talk him into cutting out bread and tortillas and basically white stuff. I had been watch videos and reading blogs from ketoconnect and I decided we would try it. Within a couple of weeks he was still testing his BG multiple times a day and his numbers were normal every time and sometimes low I told him to stop taking his oral meds (don't do this unless you consult a doctor we got lucky) he hasn't need any diabetes medication since that day almost 5 1/2 months ago. We go in a couple of weeks to see his primary care doctor to do a follow up on his bloodwork and A1c, i know the doctor is going to be happy to see that he no long is at risk.

      What a great testament to the benefits of keto! Be sure you look up their "Breakfast Enchilada" recipe if you haven't seen it. The tortillas are perfect in Mexican style dishes. I am Texan to the core and had been going without Mexican food for five months (excruciating, lol), until they came out with that. It's great.

    For both layers, add eggs one at a time, and mix until incorporated before adding next egg. If you add more than one at a time, it's too much liquid protein and fat, and will usually "break" the mixture which is why both of them went clumpy and didn't incorporate completely.
    That said, I'm new to keto and just love your channel!

    I just did this recipe today and it was truly delicious! I made it like cupcakes because I didn't have a pan like that and instead of erythrotol I used stevia in the raw same amount.

    You can get smoother batter by introducing each egg one at a time and letting it fully blend before the next is slipped in. Makes mixing so much more pleasant.

    Growing up in Savannah and Paula Deens Gooey Butter cake is my favorite so I was so excited to find this two hours ago ( I’ve been Keto since January 1 & 30 lbs lost). I baked it and just had a warm slice it is sooooo delicious thank you Matt & Meg...once again you don’t disappoint 😀

    My mom made this a lot when I was growing up...I think she generally would put the crust in the oven and brown it on it's own first for a bit and then add the filling and finish the cooking there...it would make for a nice sort of semi-crunchy/crumbly crust that we all loved. I think I'll try this recipe but cook in the same stages that she used to to see if it will be similar to hers.

      I just googled it because i was wondering the same thing?!
      It says use half the amount of xanthum gum..for Ex.(( the recipe requires 1 tbsp gelatin, use 1 tsp xanthum gum)).
      Im trying it now, hope it works?!!

    MAN O MAN IS THIS GOOD!!! The only drawback I have is the liquid stevia seemed to irritate my throat when I tasted a drop of it to see how sweet it would be, but used abt 5 quick squirts (mine did not drop), as well as about the 1/4 , 1/3 cup. Granulated Erythritol (didn't have powdered erythritol sugar, nor the time to pulse it in a coffee grinder) and it never made it gritty or any such thing. I also added Butter flavoring in the filling...was good... however, I do think adding some vibrants flavorings such as LEMON may come through nicely the next time. Yes this is a KEEPER!!! Thanks Matt.

    Ok, I screwed up and thawed out both sticks of butter with the cream cheese. Because of this I ended up mixing both layers together. My husband said it was the best keto desert I've ever made. I also added 1 extra Tbs of coconut flour. I think I'm going to make it this way from now on. Might cut butter down to 3/4 c. It was amazing.

    I make a similar cake each week. 8 eggs, 8 oz cream cheese, 8 tblspns butter, plain or salted, 3 large tblspn coconut flour,1/2 tblspn baking soda (the one in the can) 1/3 cup confec. erythritol, 15 drops of any flavored stevia I want, vanilla extract and then I will typically add some extracts, like lemon and hazelnut. Bake at 350 for 40 minutes. I eat it all week for breakfast. I cut it into squares and then fry it in ghee like french toast and maybe top w/ a cream cheese, butter, vanilla & stevia butter cream frosting. It's absolutely decadently delicious. And except for a little sweetener & coconut flour, it's all animal products. Sometimes I even leave the coconut flour out. Still fantastic.

    Just made it! It is super delicious. Cheesecake flavor but very light and gooey. Melts in your mouth. Sweetness is right on point. This is now my favorite Keto dessert! Thanks Matt & Megha. You're the best

    This looks amazing! We agree on your strategy for sweetening baked goods - we limit erythritol, and add liquid Stevia to sweeten to taste. We'll definitely have to give this a try.

    Looks great! I love gooey butter cake. It's a Saint Louis thing and we take this cake very seriously lol this looks like a good alternative to the real deal

    I finally tried this recipe. Very good but I personally would reduce the stevia significantly. I’d rather risk some digestive distress if I over indulge than deal with the weird stevia after taste.
