    When I did my kettle sour, I dumped in the whole carton of Good Belly for a 5 gallon batch. Overnight it got to 3.4 I believe. Good belly works really well. I've also used Philly Sour yeast and now that's my favorite way to make sours. It's so easy. Thank you for taking us along for this ride. I'm very curious what happens when you kettle sour AND use Philly Sour. Never did that before. Cheers!

      Philly Sour is the easiest, safest, and personally my favorite as it is easy to control. Kettle Sours has been a major learning experience, but now I know.

      Part 3 will be released tomorrow and Part 4 will be released on Tuesday.

      He posted in the comments of part 1, part 3 should be Monday and part should be Tuesday.
