You get to keep characters that are exclusive i.e heinrich or black alice on the paths they are normally unusable.
Do i need to clear both path to unlock the Chaos route?
yeah both paths to unlock the chaos route.otherwise if you choose the third choice without clearing both you get a special end of how hild was made and be put back in the great choice.
