hugelkultur has worked well for me and i live in a very arid place. It was under actively growing plants that i was watering though, so it stayed moist. The wood breaks down surprisingly fast! The one thing i learned about dry stone walls is that you always want to put the longer face of the rock pointed in. People are tempted to put the length of the rock parallel with the wall, but you really want it perpendicular, because it's so much more stable.
You don't need cement. Then you need to start dealing with drainage etc and it gets complicated. You just need a to double or triple the thickness of your wall and fill gaps with smaller stones. Your walls pretty low so it doesn't need to be that thick. But you can tie large stones in by placing them so they run from front to back to give stability. Works really well
Great project,looks beautiful and functional. That clay might make a good mud for the stones. Won't be as permanent as mortar but will last your lifetime,40 years. You had a lil pink panther in the chicken run.
