I can imagine Genaro yelling and screaming as you pour out the pasta water down the drain. "SAVE THE PASTA WATER FOR THE SAUCE!" XD That tomato sauce looks amazing.
Interesting twist! It looked delicious! Cooking is so much fun and you can turn traditional meals into your own! My husband and I are both Italian Americans, Our grandmothers have influenced and inspired most of the Italian food we eat and make . Both of our families had family dinner night on Sundays, which always had some kind of Macaroni and meatballs making an appearance. We would only use 1/4 of the garlic used in above recipe and no vinegar, we did dip our fingers in a little bit of vinegar before rolling the meatballs into balls. The one thing you didn't use is a bay leaf, so now you need to make a sequel! LOL!

You see most people believe they can post whatever they like since no one is looking.. It looks delicious and I bet it tastes delicious too. As Gizzi pointed out, this is an Italian-American recipe from New York City. This is not a Roman recipe or Neapolitan recipe. Nothing ruins a nice Italian-American food video like Italians complaining that it's not truly Italian. If you don't like it, then you don't have to watch the video. I also love the fact that a pretty British girl is the one doing the cooking. Hooooray for globalism!

well thank you, it was easy to make and extraordinary delicious! i added some more spices, though, and used whole-wheat rigatoni. meatballs tasted fantastic, quite classical but not boring.

As an "Italian italian" I feel compelled to point out that that kind of garlic amount is something totally un-Italian. Most italian-Americans have travelled over to the US in a different age, when garlic was one of the very few flavorings they were able to afford. Once in the US, the Italian cuisine started being known for the garlic and the use of garlic became a sort of badge that Italian Americans used to identify themselves. At the same time, the use of garlic declined here in Italy. Many people in italian cook with virtually no garlic and even those like me who love it rarely use more than one or two cloves in a dish like that. Also, seeing the pasta being drizzled with oil and, even worse, sprinkled with salt really hurt me. (Imagine me fainting while holding on to a curtain.)
I thought the same, and I am not even Italian, only German o.o
That's why this is ny style... Not Italian style, just saying.

Use fresh finely chopped flat-leaf parsley and fresh oregano instead of rosemary and thyme. It is important to take white bread, crusts removed, or bread crumbs soaked in milk and add to the meat as this lightens the texture of the meatball. Egg is added as a binder. Grated parmesan is also added to the meat mixture. You can spice it up with some dried red chili pepper flakes added if you like. I also add a hint of ground nutmeg.

I'm Italian/American and I'm confused where the usual ingredients are especially for binding...eggs, bread or bread crumbs and of course grated cheese. We don't call them noodles we refer to it as pasta or macaroni.
sherry4488 you left out parsley and basil lol but I know and of course in Jersey it's called gravy not sauce and it's marinara sauce if the meat is not cooked in the sauce
would u recommend substituting minced chicken instead of pork and beef? how would the recipe vary? plz advise. thank you :)

Made this dish a week ago. Pretty good. Wasn't CRAZY about the sauce but it wasn't objectionable in any way. I do have a question though. Why no breadcrumbs or egg in the meatballs? Isn't that what keeps them together? Cheers.

A nice tip: when making meatballs like this I always like to deploy a good teaspoon of sambal badjak (that's Indonesian chili paste with fried onions) to the meat before mushing up and forming balls. Gives it just that little more spice, try it!

A tip? As I am a lazy/ impatient person... I microwave my meatballs for 3-5 minutes and then brown them in a frying pan. This way is a) quicker and b) easier because it eliminates the need for delicate/ frequent turning - you can just shake the pan! :)

I will admit the final product looks like it would be good. However, there are a few things I would correct about this recipe. 1) Ease up on the garlic (and I love garlic!) that much garlic will make it the only flavor profile you taste . 2) Don't discard all of the pasta water. Pasta water acts as a glue between the pasta and the sauce you are using. 3) This is maybe the MOST IMPORTANT point: NEVER, EVER (under any circumstances) oil your pasta! Please let me explain, pasta has very, very tiny holes in it and when you use some of the pasta water and mix it with the sauce it adheres to those holes. It holds onto the pasta and makes sure it is coated in that sauce you spent time making. Adding oil (or butter, I hope no one does that) basically blocks those super tiny holes and the sauce doesn't coat the pasta. I honestly think, just adhering to these simple cooking techniques will make a huge difference in the quality of the final dish.

If you're gonna pop them in the sauce/not use the fond from the meatballs then you might as just put the tray in the oven on a high heat to get the crust then joink em in the sauce. Saves dishes/time :O
