    I love summer sausage. My favorite summer sausage is the ones that have the seeds in them. It really gives it a great flavor. My little dog loves to help me eat it when I get some sliced up with some extra sharp cheddar cheese. I don't give her the cheese though. Binds her up.

      You can do this bro, just got to put in the time and yes there is a lot of clean up but trust me it is sooooo worth it at the end!!! These PS seasoning kits really make it easy and everything I have done so far has tasted great!! Thanks for watching brother!!!

    Ernie clearly landed in the right family. Snacks for days.
    This video was awesome. I was genuinely excited to see how well that turned out (which is weird because you already showed me a picture) but still felt like a fantastic payoff for all that hard work. It’s much better to do it for real than just buy fake…it may look the same on the outside but it’s not even close.

One more thing...One of the huge benefits of making your own is you control the size. When you buy the fake kind you end up with a smaller sausage.

    Great video, just saw this. But I'm wondering on that pk100, can anyone tell me what position the vents are set for this process? I use open for drying and then close 2/3 for smoke and close for final cooking. Any input??

    Is the PK100 better for sausage then a vertical pellet? can you do sausage or bacon in a gravity feed,?

      First thanks for watching! Yes the PK100 is made to smoke sausage, bacon, and whatever you want to cure! Bothe a vertical and a gravity fed can "cook" sausage. They can't run as low of temps but they both can add enough smoke but a lot of times you get casings that have bursted open for not being able to dry the sausage out slowly. The best sausage or bacon I make is always out of the PK100. The sawdust has always added the perfect amount of flavor and color I am looking for. But the PK100 is a pricy hand made in the USA unit. I also use mine all the time to keep food warm overnight but I have done some prime rib in there that turned out great! I need to try a couple racks of very low n slow ribs in there someday.     I have a 3/4 cabelas carnivore grinder. Will 5hat LEM mixer work on my grinder?

      The gears will mesh but you really can't lock it down. The setscrew indent is on the other side. I bought a Big Bite LEM, so all my stuff would work together. Thanks for watching!

    Looks very tasty, I'm going to have to give this a try, don't have the equipment like you do but willing to give it a shot. First have to get a couple of deer. What would you recommend as a good balance between venison and pork or beef?

      I typically do 10 pounds of venison and 15 pounds of pork with some beef. I honestly think for summer sausage a good 70% meat to 30% fat gives me a good flavor for my venison sausage!

      @Dead Broke BBQ i am trying to find a full brisket for my first cook but my local places only have the flat. No point. Ugg! But one place has beef short ribs so that may be it. It says beef short ribs chuck. Is the chuck ok or is that normal. Just not used to what they call it. Thx for any suggestions Ricer.

      I have had both Claude and like them both but the LEM with the dual grind makes grinding burger so much quicker!! My carnivore has done a great job but I really wanted the Big Bite so when my friends come over we can get things done twice as fast!!

    A month? Hell. I can go through that much in two weeks. _By myself!_ 🤣
    You've got some great appliances there. I've got a 5 pound (manual) LEM stuffer, but everything else I do is with my Kitchen-Aid. It sure makes those 10 pound batches a pain in the ass. Doing a small 5 or 6 pound batch tomorrow. With plenty of Jalapeno pieces! Thanks for the video bro.

    How is 7.5 lbs of beef and 5 lbs pork 80/20? The math doesn't add up. If it is 80/20 then it would be 10 lbs beef and 2.5 lbs pork.
