    There's one thing I love more than whipped cream, and it's my stabilized whipped cream frosting! It is so incredibly delicious and light, not too sweet, and is great for piping. Best of all, it stays stable for days, making it great for decorating cakes, cupcakes and all sorts of desserts!
    INGREDIENTS:
    - 1 cup (225 g) mascarpone - cold
    - ½ cup (55 g) icing sugar - also known as confectioners/powdered sugar
    - 1 tsp vanilla essence/extract
    - 1½ cups (335 g) whipping cream - cold

    Hey, I used to add mascarpone and indeed it is very stabilized, instead of sugar I added condensed milk. Much love from Romania💓

    I’ve watched so many videos on how to make stabilized dairy whipped cream without gelatin. Mascarpone cheese was an ingredient used in another video, and then reading the comments on a different video, someone suggested Wilton Clear Piping Gel. The Wilton’s YT channel gives proportions and directions on how to use it. I haven’t tried it yet but I will. One tip from the other video using mascarpone cheese is to use smooth mascarpone cheese. Grainy mascarpone will make the whipped cream slightly grainy.

      I have been doing stabilized dairy whipped cream with Mascarpone and it never came out grainy as you claim ... it comes out very smooth and silky

      @@waiataaroha great, you use what works for you. It was the video that claimed grainy mascarpone cheese makes whipped cream slightly grainy therefore to void grainy whipped cream, use smooth mascarpone cheese.

    The thing about using mascarpone is that it makes it yellow. Would adding a drop of purple colouring make it whiter?

    Have you tried pudding mix for whipped cream frosting? It is the most stable and yummy option out of all other options (gelatin, mascarpone, cream cheese, starch, etc.) And above all that it is ridiculously cheap compared to mascarpone and cream cheese.

      Yess pudding mix is another great one! :) And you're totally right it's way cheaper. I just prefer using mascarpone when I can as it doesn't alter the flavour profile too much :)

    I’ve been avoiding doing whipped cream frostings because of the lack of stabilization. My granddaughter wants me to do her birthday cake this week and wouldn’t you know it…she requested whipped cream frosting. I’ve only just become a hobby baker and I just came across your video channel and literally love your recipes and techniques. This video so far seems more promising than what I’ve seen so far….so, I’ll be using this recipe!

    All this time iv been using cream of tartar, but Ur secret ingredient (mascapone) worked wonders. It really did stabilise, easy to pipe and most of all delicious

    Kia ora, oh so great to watch your videos!! I also live in New Zealand, and I have struggled a little bit here to make my desserts the same way back in Mexico, cause ingredients, weather, height, etc. So I am really learning with your videos!!     I love whipped cream as a frosting. I have a blackberry cake that I came up with and used whipped cream frosting, but had no idea how to stabilize it. This is everyone's favorite cake that I make, so there are rarely leftovers, but if there are, the whipped cream doesn't hold up well.

    Hey MK, does the mascarpone change the flavor of the whip cream significantly. The only reason I ask is because, I have a favorite recipe of all my family and friends where I use half vanilla custard to half whipped cream as the mixture to pipe into my cream puffs, and I have some issues with it being to runny at times, BUT I also love the flavor profile so I don't want to change that. Your stuff is amazing . Thanks for explaining things in user friendly terms.

      Yes ! I did it and it works really well and it's equally (albeit differently) delicious :)
      Use block cream cheese ! Not the spread, or maybe it also works with the spread but I haven't tried.

      It's an Italian cream cheese that uses heavy whipping cream instead of milk. If you can't find mascarpone you can use creme fraiche or regular cream cheese

    Thank you for this recipe! I love buttercream but rest of family likes whipped cream frosting.

    This is something I will definitely try for my next cake...I have got a question...I make meringue and bake it but when baking , it gets very flat, it doesn't stay as high as when I was piping it :( Do you have anny suggestions?

      Sounds like you're beating your eggs too quickly on too high of a speed which is causing large unstable air bubbles instead of smaller more stable air bubbles.

When I start off whipping the egg whites I use a low speed but when it's time to add the sugar the recipe I've always used says to whip at the highest speed. No matter what my Pavlovas always lose some of their height. Should I follow your suggestion? If I do it at a low speed will it incorporate the sugar the way it needs to? TIA for any suggestions you can give me...

      @@tammiemartinez6485 would definitely go with what @Neurodivergent Pixi has suggested :) a lower speed will make for a more stable meringue, not too low though so I'd stick to a medium speed :)

    How does it taste? I mean after adding the mascarpone cheese does it give more like cheesy flavour or it tastes the same like whipped cream? I've never tried mascarpone cheese so just doubtful...

      Mascarpone cheese tastes like a very thick cream. It doesn't have the sour / tangy taste of cream cheese, which is why I love mascarpone.

    So as quickly as you whisked it in this video, is it really that short? I know I whipped mine a little longer. Maybe that’s why it wasn’t so smooth and creamy?😅

    arrrr, you're videos are great but i don't have mascarpone in mauritius. i don't want to do a butter frosting bc i don't like the taste of it and idk if it will be good for a genoise cake. what should i do pls help.

    salam! is it ok to add the mascarpone early on in recipe and whip it bc ive heard mixing it too much can result in curdled cheese? its happened to me which is why im hesitant about adding it in beginning...how to make sure it doesn't curdle?

    What characteristics should heavy whipping cream have to achieve better quality? I use one that has 3.5 g fat but it doesn't fit very well and it gets watery.

      I watched a video that says to put the whipping cream in the freezer, and pull it out one night before you want to do your frosting. Also, freeze the bowl and whisks in freezer for ten minutes before using it. Hope that would help!

    Thank You for sharing this awesome recipe. Please share the taste of this whipping cream - can u taste the mascarpone cheese? I am looking for vegetarian ( without gelatin or instant pudding) way to stabilize the whipping cream.. Any suggestions? Thank You!

      Hi Roshni! It tastes very similar to a regular whipping cream as mascarpone doesn't have an overwhelming flavour to it :) in terms of other vegetarian options I'm not too sure but people say powdered milk works well although I haven't tried myself :)
