She would do 5 course dinners and the thing I remember most is the cannoli for dessert. Once the table was cleared, she sat and put them together and passed them around. It was a dining experience.

@CookingwithSugarTV The homemade garlic knots took longer than I had anticapated so will make this another day. Would have been a complete Italian meal then with meatballs & spaghetti. I love being creative in the kitchen and experimenting with what works and doesn't. My lasagna is probably my best dish, 2 extra ingredients makes all the difference. Keep up the super vids. Hope
Holy Cannoli those were great , I like them a little grainy as you say , not too fine as it becomes very dense.... great treat , we do a similar treat on pizzelle cookies , really good and a lot easyer than making the shells ...... nice job....!!!

Paula, that's so true! My mom and I make homemade cannolis but this is the compromise for many people who can't make them completely or can't get them from an Italian market. :)

This is such a good idea. Can't wait to try to make some! How come you didn't need to butter the baking tins? Would using paper baking cups make the dough soggy?

If you refrigerate it, it will firm up. If you want the cream to be extra thick next time you can stain the ricotta in some cheese cloth placed in a bowl and covered over night before you mix your sugar to make the cream. This will remove any excess water and give you a thicker consistency. Make sure you only use whole milk ricotta.
@@jessicatrimble1683 You could, but I have not done it that way. You would need to get a consistency that is wet enough to get the filling into a pastry bag or you would need to just spoon it into the cups, which might break them.
@jenneration3 You can mix the cream by hand but it won't be ass smooth but it will still work. Try draining it over night with some cheesecloth in a bowl then mix it the next day. This will help you get a smooth cream that you can whip by hand. Enjoy!
