Our old one only made two at a time, this one makes four! Nicely sized 1 inch thick which are lovely! Now the kids don't have to wait as long to eat our weekly waffle breakfast and everyone's are hot if we wait and eat all together! Setting 3 seems to work perfect for golden brown. Be sure to pour the batter in the center of each waffle square, not the center of the iron like the novice that posted the scorched waffles photo. About a 1/4 to 1/3 cup of batter in each seemed to work well for us. We tested making just one at a time so we could use all the remaining batter and it made it just as fluffy and golden as when we made 4!
I just made this recipe today OMG so crispy and chewy inside, I added cocoa powder and brown sugar a little bit it’s soooo goood my husband and my daughter ate lots of them. Thank you so much
My daughter it tastes like taiyaki lol. I like the texture , definitely very crispy but I miss the buttery flavor of conventional waffles....will try to mix it up next time!

Cornstarch helps achieve that perfect texture-not too dense, not too chewy. In this recipe, you might be able to get a similar effect by using all-purpose flour as a substitute.

Tapioca flour and potato starch are substitutes for cornstarch, not Mochiko! Sweet rice flour is the main ingredient and can't be substituted, but it doesn't have to be a Mochiko brand.
This recipe is specifically designed for sweet rice flour and the ingredient quantities will need to be adjusted if using flour. I'll try making another waffle recipe with regular flour some time!
From what I know, glutinous rice flour and sweet rice flour are the same thing. However, the flavor may slightly differ from product to product depending on the variety of rice used.
It was crispy enough to withhold toppings like whipped cream and fruit, but not too crunchy. If you like it softer somehow, use a little less cornstarch or cook a little shorter.

Thank you! I haven't done it with this recipe but you can store waffle batter in the refrigerator for up to 2 days.

can you make these without baking powder?
pretty much every waffle recipe has either baking powder or yeast. you need it to have rise.
Why did you use rice flour over AP flour?
I think rice flour makes the batter slightly lighter and crispier. It is kind of airy-crunchy outside and just a little gooey inside.
