Followed you on IG for awhile but only just discovered you on yt and I am so excited to try this. I want to love butternut or pumpkin soups SO BAD but no recipe I've tried has converted me. It all just tastes like earthy mud water to me. I'm excited about the addition of carrots and fennel. It kinda reminds me of ATK's Carrot Fennel salad, which I LOVE, even though I'm oil-free so I just do a basic 3-2-1 dressing with orange juice added. Sorry this is so long, but I just know I'm going to love this, thank you! Now, if I could only find a curry recipe that can convert me (I've tried a million!)...
