Nope never heard of Lemitar N.M...but I've heard of green corn tamales lol. 😂 I called that Bustamente store this morning and they won't have any more red chilies pods for about 3 weeks. But when she said shipping to Texas is about $50 bucks and I live in Oregon? Well I told her thank you anyway and have a great day!
Live just south of Lemitar. We are lucky in Socorro County to have some very good and quite affordable New Mexican restaurants. I think the local chile is part of the reason.

My parents were born and raised in Socorro. There is something so special about the red chile in this region that makes the food so delicious. Especially the tamales at Christmas time. Always looking forward to visiting the Rosales family in Escondida Thank you for sharing
I know exactly what you mean. I left there feeling so proud of them. I didn't say this on the video, but the young man took over the family farm when he was only in High School, when his father passed away. He later married another 5th generation farmer from the area, and together they are carrying on the chile growing tradition. You just know they work hard to put out a good product, and I love seeing that.
Looks delicious. I live between Houston and Galveston and always have roasted Hatch green in the freezer and hatch red chile pods in the pantry. This time of year is all about green chile stew, posole and carne adovada, etc! My mom was born in Magdalena and my dad was born in Socorro. My Grandparents had a farm in Polvadera.
I have in the past bought most of my green chile from Lemitar mainly because is was closer than Hatch to my home. I think it is just as good as Hatch chiles. I got my green chiles from Rosales Produce and I personally like the Sandra variety. Now if I can get it locally from Walmart (Young Guns Chile) I will do that. Of course you can make a trip to Lemitar and stop in San Antonio for a GCCB at the Buckhorn.
Marcy, I've watched your videos for a few years now, and I love how you showcase southern New Mexico. I'm from the Mesilla Valley as well. Imagine my surprise when I open up this video to see you featuring my great uncle Clemente Bustamante's farm and family up in the Socorro area. I've shared this with all of my Bustamante-Gomez family, and we've all enjoyed it, especially my dad, aunties and uncle who grew up working and helping on that farm. Keep up the great work of sharing southern New Mexico's food, stories and culture.

When I mentioned to my stepdad that I had stopped in Lemitar and that I bought chile from Bustamante Farms, he immediately mentioned that he knew Clemente. Your great uncle would be proud of how his legacy is continuing today.
My husband was born in Soccoro. We live in Alabama, so when we go to NM, we mostly visit family. My husband taught me many recipes from NM. We ordered 50 lbs of Hatch fresh green chili and roasted them ourselves.
That looks so good I can almost taste the dish. I think my younger brother has bought chile, green and red, all up and down the Rio Grande, many good producers of chile in New Mexico that is for sure. I know all the places you referenced. Not bad being born and raised in AZ. You stated your Dad was born in Socorro and that isn't far from where Dad was born in Hot Springs, now T or C, back in the early mid twenties. (1923) I enjoy your channel very much and each time I watch I get helpful hints and a variance of approach to some dishes. So, I am truly "Marcy Inspried" on different levels about once a week! I had nothing else to do and just took my time making stops along the way. It had been years since I'd done that. These little towns were a part of my childhood, but as an adult, I just never had the time....until now. It's fun to think that maybe our Dads knew each other or crossed paths. My Dad's been gone since 2015. I sure miss him.

Chili Colorado is my 88 year old mom’s signature dish. She’s well known for making the best. We call her the Queen of the Chili Colorado. Can’t wait to show her your version. She’s always said New Mexico chiles are the best. Your version is making my mouth water!
I remember my mother in law adding 1 slice of bread per blender full of red chile. Hers was always so good and texture was awesome. I’ll have to try your version- but I’m going for mild, I’m a wimp! 😅

You and I think alike...when you cut open the chiles I thought, "she should save those seeds and plant them in the spring to see what happens." Then you said it. 🤣 When I make orders for NM products I always read the fine print to make sure they're really from there. Thanks or the video and for showing us some of NM. I can hardly wait to plant a garden. I have little packets of all sorts of seeds saved everywhere. In fact, I need to label them before I forget what they are! lol So true about reading the fine print. I just saw another package of chile that said "New Mexico type chile."

Chili con carne with pork is one of my favorites. I must have fresh handmade flour tortillas with my chili con carne. This is the only way my mother in law served hers, she really spoiled us. She sometimes added nopales to her chili con carne. Thank you for the recipe.
Yes I know Lemitar..From Socorro and family from the valley there for centuries. Still go home at least once a year even though I am on the left coast 🙂 Take care!

I have family from Socorro NM. My Uncle Robert and Aunt Louise Sorrells had a ranch. He passed but Aunt Louise is still in same house! LOVED visiting and hearing his stories. Their house still had and I believe still has the old adobe walls💕maybe you knew them? Son Donnie and daughter Tiny💕
I have relatives in Socorro, but I didn't grow up there, so I don't really know many people there. But it's a small enough town to where my relatives probably knew your relatives.
We usually get our chile from Lemitar. It is just as tasty as the Hatch chile. We sometimes also get it from the Snake Ranch stand that they have in Los Lunas, I think they grow theirs in San Antonio, NM. No matter where you get it, the chile is always worth the drive. I’ll have to go to Bustamante’s next year. This year due to lack of time I couldn’t make the drive so we got our chile from one of the stands in Santa Fe. Great video!

Well, my friend Barb told me at our worship team band practice (I play the piano), that she made it and she and her husband thought it was the best soup they'd ever had!! I haven't made it yet, but I will. I always prefer red chili over green chili, so I definitely need to try this, and pass I will pass it on to Barb.

The main reason why I watch it is because I eat mostly with chilies. I'm addicted to all chili peppers and can't get enough. Not only are chilies good for us and the many health benefits, but I really enjoy learning from you. I grew up in Colorado with green chilies and, for a long time, now live in California with more red dried chilies. I'm a white girl, but my spouse is Mexican. But since childhood, I have been addicted to all chilies. My girlfriend sends me different New Mexico chilies when she can. Colorado Pueblo green chilies are also good. I love all chilies and almost never have a meal without chilies. I really enjoy your style and incorporate your recipes into my life. Thank you so much!

I especially like your recipes because they are so much like how my abuela made in Bernalillo years ago. She always said "First make a good bowl of red, then make your con carne." We always made it consuming the ristras hanging from her porch. Let me remind you, every canyon in northern NM has their own chiles and each are distinct, and I think much better than flat land chiles in the south. You might try some of them for variety.
My mom did beef and chicken in this red chili sauce cause pork was used in green chili sauce. I keep this tradition but have tried the pork in red chili sauce 😋
Definitely making this recipe this weekend Marcy love your channel. I do think you're due to upgrade your blender with how much Chile sauce you make 😂. I had the same Oster for years and my wife forced us to get a new one but, honestly makes life a lot easier.
That is so funny that you say that. Every time I make chile in it, I think "is this the day that it's finally going to give out on me?" lol It's super old, but it works. I would love to upgrade to a Ninja blender. Those are awesome. Of course, you can't see as well through the plastic as you can clear glass, but I'm willing to compromise. Ha! Thanks for watching.
This is my grandmas exact recipe, only difference is she uses ground beef and we call it Chile Carribe. We use it as gravy for all holiday and family dinners ❤.
I love all the different regional chiles. It's kind of like being a wine snob - being a chile snob. You can tell by taste and smell where the chiles are from, be it Chimayo, Albuquerque, Lemitar, Hatch, or my personal favorite - Deming. Most of your chile is irrigated with Rio Grande water, but Deming chile is irrigated with groundwater that is more pure than other places. I really miss Diaz Farms (of Deming), but I guess there was some pretty sad drama that caused them to shut down.

I live in Albuquerque. We can find Lemitar green chile for sale on North 4th Street, and it is very good. Can't find it every year, but when we do find it at the Rosales location, it is a very popular place. I like it because hot is hot! If there are other places, I don't know about them.
Well, hello neighbor! Lemitar is, literally, just off the freeway, so super convenient if you're already driving to Albuquerque. Just be sure to check their store hours before you go because they're not open every day. I included that in the Description Box.
I will stop next time in Lemitar on my travels from Tucson to Albuquerque or on my way back to Tucson. Albuquerque is home but I moved from there over 40 yrs ago. I try to visit my family there every year. Blessed is the nation whose God is the Lord.

I hope you do. The chile I bought there is some of the best I have ever had. Later that evening, when I sat down to really eat, I almost wanted to re-shoot the ending of the video to emphasize more how delicious it was! And, when you see how young they are to be doing what they do, it just makes you so proud.
I remember hearing years ago that the buyer should beware when purchasing their chilis in New Mexico. The green and red chili I buy in New Mexico can be counterfeit. Because of this, now there is special labeling that must be on sacks or any type of chili that was grown here. I don't remember how that certified label reads but I was warned to watch out for the "trick" words used that try to fool the buyer. I do so love your dishes, Marcy; I have already made a few recipes and MAMMA-MIA; folks, you do not want to miss out on this.
After seeing "New Mexico Style," I also found a label that read, "New Mexico Type Chile." It's crazy, but it has made a label reader out of me.Thanks so much for the comment. I appreciate the feedback.

Do they ship out of state? I currently live in ND, but miss NM red chili sooo much. Yes, I've been to Lemitar many years ago. I use to live in Albuquerque and often traveled to Socorro and the area.
I like fresh, but once a year, I make chili Colorado and freeze it into portions. I can use it for chili Colorado, enchilada sauce, pozole, and many dishes in a hurry. I buy tons of dried quajillo, a little ancho, and arbols. I make a huge batch and freeze them into quart or pint size bags. I live in California, so sometimes I go to Tijuana to buy my chilis. I really like New Mexico chilies because they can be hotter . you choose. I love hot but I have to make it less hot for others. I don't add salt to my freezer chili because I'd rather add it later since it can make many different dishes with just one recipe
Sounds like you have it down to a science. That's smart not to add the salt, until later, especially since you don't know how it will get used. As much as everyone sees me cooking with green chile, red chile is my personal favorite. It just never lasts in my house, so when I run out of chile pods, I have to go out and buy some to make a new batch. My favorite is red chile over scrambled eggs for breakfast, or chilaquiles with a fried egg on top. It's the breakfast of champions!
Just made this chili sauce using New Mexico red chile pods. I made it with chicken breast, and it turned out really well. The one problem we had was with the spice level. It is way too hot for us. I know this is due to the dried chiIes I used. I thinned it with water some, and then re-thickened it with some masa which brought the spice level down some. Any other ideas? What are some other applications for the sauce. Thanks for the great recipe. It was super easy with pantry items.
This sauce can be used for enchiladas, you can use it for menudo, you can use it for tamales in both the filling and masa to give it a little color, you can drizzle it over your eggs for breakfast, make chilaquiles with it, the possibilities are endless. Also, since you mentioned the chile pods you used were too hot, try making chili beans with it, and include the liquid from the beans to offset the heat. That and some ground beef, and you should be set. You can also add a can of tomato sauce. If it's still too hot, you'll need to buy mild, and then just sparingly include a couple of hot chile pods when you make it.

I can hardly wait to plant a garden. I have little packets of all sorts of seeds saved everywhere. In fact, I need to label them before I forget what they are! lol So true about reading the fine print. I just saw another package of chile that said "New Mexico type chile."
@@marcyinspired1442 One year I had SO many plants that came up in my compost area I decided to let a couple grow to see what they were...they were tomatillos! I thought if I ever needed to farm for a living I know I can grow those! 🤔
We're heading down that way on our vacation this winter. Just from watching your videos. Going to load up on Hatch green chilis and Red chilis as well. Plus on the hunt for Mexican clay cooking pots to take back home to northern Indiana. I love your channel. My favorite!!

I've had both the Bustamante chile and the Estancia beans...top notch all around. My brother picks up the beans for me from time-to-time...I call them my "emotional support beans" because they remind me of my abuela's nobody-will-ever-do-them-better beans.

Chili con carne with pork is one of my favorites. I must have fresh handmade flour tortillas with my chili con carne. This is the only way my mother in law served hers, she really spoiled us. She sometimes added nopales to her chili con carne. Thank you for the recipe.

I have family from Socorro NM. My Uncle Robert and Aunt Louise Sorrells had a ranch. He passed but Aunt Louise is still in same house! LOVED visiting and hearing his stories. Their house still had and I believe still has the old adobe walls💕maybe you knew them? Son Donnie and daughter Tiny💕
I have relatives in Socorro, but I didn't grow up there, so I don't really know many people there. But it's a small enough town to where my relatives probably knew your relatives.

We usually get our chile from Lemitar. It is just as tasty as the Hatch chile. We sometimes also get it from the Snake Ranch stand that they have in Los Lunas, I think they grow theirs in San Antonio, NM. No matter where you get it, the chile is always worth the drive. I’ll have to go to Bustamante’s next year. This year due to lack of time I couldn’t make the drive so we got our chile from one of the stands in Santa Fe. Great video!

The main reason why I watch it is because I eat mostly with chilies. I'm addicted to all chili peppers and can't get enough. Not only are chilies good for us and the many health benefits, but I really enjoy learning from you. I grew up in Colorado with green chilies and, for a long time, now live in California with more red dried chilies. I'm a white girl, but my spouse is Mexican. But since childhood, I have been addicted to all chilies. My girlfriend sends me different New Mexico chilies when she can. Colorado Pueblo green chilies are also good. I love all chilies and almost never have a meal without chilies. I really enjoy your style and incorporate your recipes into my life. Thank you so much!

I especially like your recipes because they are so much like how my abuela made in Bernalillo years ago. She always said "First make a good bowl of red, then make your con carne." We always made it consuming the ristras hanging from her porch.
Let me remind you, every canyon in northern NM has their own chiles and each are distinct, and I think much better than flat land chiles in the south. You might try some of them for variety.

My mom did beef and chicken in this red chili sauce cause pork was used in green chili sauce. I keep this tradition but have tried the pork in red chili sauce 😋

Definitely making this recipe this weekend Marcy love your channel. I do think you're due to upgrade your blender with how much Chile sauce you make 😂. I had the same Oster for years and my wife forced us to get a new one but, honestly makes life a lot easier.
That is so funny that you say that. Every time I make chile in it, I think "is this the day that it's finally going to give out on me?" lol It's super old, but it works. I would love to upgrade to a Ninja blender. Those are awesome. Of course, you can't see as well through the plastic as you can clear glass, but I'm willing to compromise. Ha! Thanks for watching.
This is my grandmas exact recipe, only difference is she uses ground beef and we call it Chile Carribe. We use it as gravy for all holiday and family dinners ❤.
I love all the different regional chiles. It's kind of like being a wine snob - being a chile snob. You can tell by taste and smell where the chiles are from, be it Chimayo, Albuquerque, Lemitar, Hatch, or my personal favorite - Deming. Most of your chile is irrigated with Rio Grande water, but Deming chile is irrigated with groundwater that is more pure than other places. I really miss Diaz Farms (of Deming), but I guess there was some pretty sad drama that caused them to shut down.

I live in Albuquerque. We can find Lemitar green chile for sale on North 4th Street, and it is very good. Can't find it every year, but when we do find it
at the Rosales location, it is a very popular place. I like it because hot is hot! If there are other places, I don't know about them.

Well, hello neighbor! Lemitar is, literally, just off the freeway, so super convenient if you're already driving to Albuquerque. Just be sure to check their store hours before you go because they're not open every day. I included that in the Description Box.

Later that evening, when I sat down to really eat, I almost wanted to re-shoot the ending of the video to emphasize more how delicious it was! Made this with chile pods I purchased in Hatch at the Hatch Chile Express. I added more pork and it makes GREAT burritos!
I remember hearing years ago that the buyer should beware when purchasing their chilis in New Mexico. The green and red chili I buy in New Mexico can be counterfeit. Because of this, now there is special labeling that must be on sacks or any type of chili that was grown here. I don't remember how that certified label reads but I was warned to watch out for the "trick" words used that try to fool the buyer. I do so love your dishes, Marcy; I have already made a few recipes and MAMMA-MIA; folks, you do not want to miss out on this.
After seeing "New Mexico Style," I also found a label that read, "New Mexico Type Chile." It's crazy, but it has made a label reader out of me.Thanks so much for the comment. I appreciate the feedback.

I like fresh, but once a year, I make chili Colorado and freeze it into portions. I can use it for chili Colorado, enchilada sauce, pozole, and many dishes in a hurry. I buy tons of dried quajillo, a little ancho, and arbols. I make a huge batch and freeze them into quart or pint size bags. I live in California, so sometimes I go to Tijuana to buy my chilis. I really like New Mexico chilies because they can be hotter . you choose. I love hot but I have to make it less hot for others. I don't add salt to my freezer chili because I'd rather add it later since it can make many different dishes with just one recipe
Sounds like you have it down to a science. That's smart not to add the salt, until later, especially since you don't know how it will get used. As much as everyone sees me cooking with green chile, red chile is my personal favorite. It just never lasts in my house, so when I run out of chile pods, I have to go out and buy some to make a new batch. My favorite is red chile over scrambled eggs for breakfast, or chilaquiles with a fried egg on top. It's the breakfast of champions!
My family has a friendly feud over which is better, NM chilies or Colorado chilies. I'm on the winning side, NM all the way.

Just made this chili sauce using New Mexico red chile pods. I made it with chicken breast, and it turned out really well. The one problem we had was with the spice level. It is way too hot for us. I know this is due to the dried chiIes I used. I thinned it with water some, and then re-thickened it with some masa which brought the spice level down some. Any other ideas? What are some other applications for the sauce. Thanks for the great recipe. It was super easy with pantry items.
This sauce can be used for enchiladas, you can use it for menudo, you can use it for tamales in both the filling and masa to give it a little color, you can drizzle it over your eggs for breakfast, make chilaquiles with it, the possibilities are endless. Also, since you mentioned the chile pods you used were too hot, try making chili beans with it, and include the liquid from the beans to offset the heat. That and some ground beef, and you should be set. You can also add a can of tomato sauce. If it's still too hot, you'll need to buy mild, and then just sparingly include a couple of hot chile pods when you make it.
