Just made it. wrote down the ingediants and steps while watching the video. Dough is pretty good and crazy easy. bubbled really nice and didn't need my stand mixer. this is coming from someone with military-related wrist and arm damage. dough is super chewy and crispy and makes enough dough for two 8x10 lLloydpans. Only took about 5 hours. Just dont be shy with the olive oil. first one stuck to the pan and bottom tore off. still ate it and still really good though and still crispy and chewy. Highly recommended for beginning home pizza makers.
One thing needs to be changed... You absolutely need MORE CHEESE! And I strongly recommend using Brick cheese instead of mozzarella.

For a true Detroit pizza, 100% right. More cheese, and brick cheese. It should melt down the side of the pie, between the pie and the pan to caramelize. That said, it did look like a great pie!

Detroit native and genX here. Guga, well done man. It looks like you got the crust spot on, toppings are secondary.
Toppings for me are always primary. But a crust can help.
@@tanikokishimoto1604that’s what sets Detroit’s pizza above others, toppings are easy it’s mastering the perfect crunch of the crust that’s the important part.
The sound of that crunch took me back to breaking a bracket while eating pizza at Loui's so I think you did a great job. Very light on the cheese for a Detroit pizza but I've seen a few people order it that way so it still holds.

You can totally do this with any metal cake pan and it's just as good. Just so long as it's metal it will cook the cheese on the sides right. The special pan is only to get the desired shape.
You can use a cake or bread pan no prob

Right? And the first pizza is a nice take on it, but it's not the same.
It really is. It gets the least love and attention out of the most well-known styles, and the deserves to be on par with them. And it's the easiest kind to replicate at home.
At 4.5 to 5.5 hours to make, I can understand why it is. That kind of time will turn many people off from trying it.
Agreed. It's a toss up for me on NY style or Detroit style being best everything else is fighting for a distant 3rd place.

I’ve ALWAYS been a lover of Detroit style pizza. ESPECIALLY when it’s made from Detroit itself. Coming from a person who lives in Detroit, I gotta say that the steak version takes it to a WHOLE NEW LEVEL. I don’t know if I would pay even $40-60 for it. But if it comes about that it comes around it, sign me up. Buddy’s Pizza, take notes. BTW, Guga, if you ever come to Detroit, stop by to Buddy’s. But he did! I'm from the D and you need to spread brick cheese all around the edges. He did not make a Detroit style pizza! OK , maybe Detroit style but not authentic like they are made here.
The dough differently looks amazing
Here is a new video idea if you find fit. In Italy, there is this thing called Lardo which is smoked pig fat. A traditional way of eating it is by grinding it with garlic which turns into a spread, kinda like a buttery texture. It is very flavorful. Maybe you can use that ingredients to enhance steak or burgers. Think this would be a cool idea.
I feel like Detroit style gets slept on in the pizza wars even though it is objectively the best of both worlds.
I have been thinking on making Detroit style for a while now. Will do it on Sunday, because of Mothers day. And thank you for the dough recipe.

Guga officially out pizza'd the hut.
Let's see, making the dough alone would take 4 hours? more maybe? So anyone selling this pizza the way it was made here would need to hire personnel after hours to prepare the dough for the next day. That means also they would need the storage room to keep the dough.
Now I am sure this pizza here is truly delicious. But either I need to wait 5 hours or more to have it or I'm spending a lot of money to buy one. I think Pizza hut will do just fine.

@@TheKarmak Just going to point out that even Pizza Hut makes all their pizza bases the day before and stores them overnight.... so the storage room is not a new thing. Now the folding every 30 mins and having to spend 4 hours out of the fridge before hand.... that is different and not easy for ever pizza place.
a great tip guga before the cheese goes on the raw dough sprinkle it with a good amount of smoked paprika it will give it that wood oven taste that your home oven can never do trust me it's a 10 out of 10!

Here is a tip for the perfect amount of dough. Measure pan on centimeters - length and width. Multiple the numbers- the result is the amount of dough in Grams!

So depending on the amount of folds you do (he said 4-6 and each needs 30 mins rest), this method takes 4.5-5.5 hours to get a pizza. Now granted 4-5 hours of that is resting/cooking time, but still it's not something you just try on a whim.

Come on now... No where NEAR the amount of cheese for a Detroit style. The crunchy cheese along the edge crust in that pan is Detroit signature. He got some... but not enough. Not near enough. 😅 Don't get me wrong, a Guga pizza looks great but sorry, it's NOT a Detroit pizza.

I enjoy Neapolitan pizzas…but nothing beats pan pizzas for me. Detroit style (which I believe is derived from Roman pizza in essence) is arguably the best version of the pan pizzas.
@Guga , next time put seasame seed on top of the cheese and pepperoni. Will make it even better. Jets in Macomb county does that all the time and it's outstanding.

Born and raised in Detroit, still live there now. Unless you're going somewhere fancy, you layer sauce then cheese then toppings. Not like this. The key is cheese all the way to the edge so you get crispy cheese on the crust. It IS about the crust....

The style of dough is very reminiscent of the Maltese pizza from the pastizerria however everything in Malta is a copy form something abroad so I want be surprised if the copied it from the people in detroit.
This looks soo amazing, thank you so much for the recipe. I think your steak pizza would have been even better if you cut the steak up a tiny bit smaller, that way the juices wouldn't take away from the airiness of the pizza and also make it easier to bite into. You are so used to making steak the king but in this dish to make it better as a whole the pizza has to be the king. Omw it looks so good and you made it so well

GUGA, I DO FOCACIA OFTEN, for each spoon of grease/oil i allways add to the tray, i add one spoon of water, it hidratates the dough when baking and it do not remain moist
