If you let off the gas a little in last gear & hold steady right b4 redlining you can add 3-10 more miles to your top speed. As far as I know it's called redline tech.
Take the infiniti, put W16. It has one of the best top speed after the chiron and regera, it accelerates like lotus exige but not for low speeds, both for low and high speeds. Its normally not a reliable car because its extremly unstable at handling but in drag racing the accel and top speed really makes it the king

I use the nissan 240z in s+ with a 2.9L V6 engine and that car is really quick i went up against someone using the delorean. The acceleration is almost the same i believe but beat it because i have more speed.

I also found that the lancer IX is also really good if you put the 7 gear transmission in it. I also found that the Ferrari F-40 is a grip monster.
this game is gradually started to become a good nfs again but unfortunately i personally don't like different tires and classes also the day an night system ruined the story mode , i wish they remove Class types completely like old need for speed games

You should try the S15 Silvia for s+ drag racing. It’s probably the best drag car I’ve seen. Plus it’s top speed is 233.
