I have eaten one of those before. But instead of purple yam with white layer, it was chocolate with white layer. it was yummy. If I can't find any water chestnut flour/powder, then is cornstarch or potato starch doable for that recipe?
With corn starch or potato starch made out, the taste will be much worse, because the water chestnut powder itself is sweet, do, will eat better!

Can I change chestnut powder with other ingredients?
The way she uses it in the video reminds of Agar powder, which can be used to make the cake gelatinous like the Chestnut powder did. Im not sure how close it is too Chestnut powder, but it seems rather close, and possibly a faster method. Agar powder can be substituted with Gelatin sheets, and is usually poured into the substance of choice to make it gelatinous. You must strain it first also. I am not too familiar with it however, but there are many cooking videos that use Agar powder and Gelatin sheets! I recommend you watch some of "Hidamari Cooking" videos and "Cooking Tree" videos, particularly the Kohaku and clear Cheesecake videos to see how it to cook with it more closely! Also, a lot of their cakes that looks shiny will have used gelatin sheets in the icy about them to give them that shiny gleam, I also recommend watching those videos with that have deserts with smooth shiny icing on them. 💝

因为白色部分的椰浆比较浓稠,而且加的马蹄粉比较多,所以不用先加热搅拌粘稠
